BANANA MUFFINS









BEST EVER BANANA MUFFINS

Ingredients :

3  large  ripe bananas
3/4  cup  white sugar
1  egg   (large)
1/3  cup  oil,  vegetable oil is best
1 1/2  cups  all-purpose flour
1  tsp  baking soda
1  tsp  baking powder
1/2  tsp  salt


Instructions :

1.  Preheat your oven to 350'F/176'C and line your muffin tin with paper muffin cups.  Set aside.

2.  In a large mixing bowl, mash the bananas with a fork until no large pieces remain.

3.  Add the sugar, egg and oil and mix with a wooden spoon until everything is incorporated.

4.  Measure the flour, baking powder, baking soda and salt into a separate mixing bowl and stir them together with a fork.  Once they're mixed together, dump in the dry ingredients into the wet ingredients.

5.  Using a wooden spoon, carefully mix the wet and the dry ingredients together.  The danger here is over-mixing which will result in dense, flat and dry muffins.

6.  Spoon the batter into the prepared lined muffin cups.  Bake the muffins in the preheated oven for about 23 minutes until golden brown.

BASIC MUFFIN RECIPE










BASIC MUFFIN RECIPE

Ingredients :

2  cups  all-purpose flour   (260 gm)
1/2  cup  granulated sugar   (100 gm)
2  tsp  baking powder
1/2  tsp  salt
3/4  cup  fresh milk,  room temperature   (180 ml)
1/2  cup  unsalted butter,  melted and cooled   (114 gm)
2  large  eggs,  room temperature
2  tbsp  coarse sugar,  optional


Instructions :

1.  Preheat the oven to 350'F/176'C.  Line a muffin pan with paper liners; set aside.
2.  In a small bowl, whisk the flour, sugar, baking powder and salt together.
3.  In a medium bowl, whisk the milk, melted butter and eggs together until well combined.
4.  Add the flour mixture and stir with a silicone spatula just until combined.
5.  Divide the batter evenly between the muffin cups and sprinkle the tops with coarse sugar if using.
6.  Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs attached.
7.  Transfer muffins to a wire rack to cool completely.  Muffins are best the day they are made but they can be stored for later use.


Notes :

You can use oil instead of butter but keep in mind that the texture of the muffins will be much softer.

NUTELLA SWIRL MUFFINS









NUTELLA SWIRL MUFFINS

Ingredients :

1 1/2  cups  flour
1/4  tsp  salt
1  tsp  baking powder
1/2  cup  unsalted butter  at room temperature
2/3  cup  sugar
2  eggs  (grade A)  at room temperature
2  tsp  vanilla extract
1/3  cup  sour cream   (I use plain yogurt)
1/4  cup  fresh milk
1/2  cup  Nutella


Instructions :

1.  Preheat your oven to 350'F/176'C and line your muffin pan with muffin liners.  Set aside.

2.  In a medium bowl, add the flour, salt and baking powder.  Whisk together and set aside.

3.  In another medium bowl (or the bowl of your stand mixer), add the butter and sugar and cream together on medium speed until light and fluffy.

4.  Add the eggs, one at a time, mixing between each addition.

5.  Add the vanilla extract, sour cream and milk and mix until fully combined.

6.  Pour in the flour mixture and mix until just combined.

7.  Use a cookie scoop to fill each muffin liner about 1/3 full.

8.  Use a small cookie scoop (or a teaspoon) to add a teaspoon of Nutella to each muffin tin and then gently create swirt with a toothpick.

9.  Scoop the remaining batter evenly among the muffins.

10.  Top with an additional teaspoon of Nutella to each and then gently swirl again.

11.  Bake for 20 minutes or until just golden.  Remove from oven and let cool on a wire rack.

MUFFIN PISANG COKLAT










RESIPI MUFFIN PISANG COKLAT

Bahan Kering :

1  cawan  tepung gandum
2  sudu besar  serbuk koko
1/2  sudu teh  soda bikarbonate
1  sudu teh  serbuk penaik@baking powder
Sedikit garam


Bahan Basah :

3/4  cawan  pisang yang sudah dilecek
1/2  cawan  minyak jagung atau minyak masak
1/2  cawan  gula perang
1  biji  telur yang dipukul sedikit   (saya guna gred A)
Chocolate chips secukupnya


Cara-Cara :

1.  Panaskan oven pada suhu 160'C selama 15 minit.

2.  Ayakkan semua bahan kering ke dalam mangkuk.  Ketepikan.

3.  Campurkan semua bahan basah ke dalam mangkuk lain dan kacau rata.

4.  Masukkan bahan kering yang sudah diayak ke dalam campuran bahan basah.  Kacau dengan whisk sekejap sahaja.  Jangan terlebih kacau nanti muffin akan keras selepas dibakar.

5.  Letakkan kertas muffin ke dalam loyang muffin.  Sudukan adunan tadi sehingga 3/4 penuh.  Taburkan chocolate chips di atas adunan muffin tadi.

6.  Bakar selama 20-25 minit atau sehingga masak (bergantung pada oven masing-masing).  Cucuk dengan lidi sate untuk pastikan muffin sudah masak atau tidak.

MINI COFFEE CAKE MUFFINS










MINI COFFEE CAKE MUFFINS

For The Muffins :

1  cup  flour
1/3  cup  caster sugar
1  tsp  baking powder
1/4  tsp  salt
1/4  cup  butter,  melted   (57 gm)
1  egg   (me : large egg)
1/3  cup  milk
1  tsp  vanilla extract


For The Crumble Topping :

2  tbsp  flour
1/3  cup  sugar
1/2  tsp  ground cinnamon
2  tbsp  butter,  melted


Instructions :

1.  Preheat oven to 350'F/176'C.

2.  Spray a mini muffin pan with non-stick spray.  (me : use papercups)

3.  For the muffins :   In a large bowl, combine flour, sugar, baking powder and salt.  Add in melted butter and mix with a fork so the mixture is crumbly.  Add egg, milk and vanilla extract.  Continue mixing with a fork so everything is combined.  Pour this mixture into the mini muffin pan --- it should fill up approximately 16 muffins.

4.  For the streusel topping :   In a small bowl combine flour, sugar and cinnamon.  Add melted butter and mix with a fork so the mixture is crumbly.  Sprinkle this mixture on top of the muffins.  Keep sprinkling until it's all gone@used up.

5.  Bake for 14-15 minutes.  Let cool for 10 minutes before removing muffins from pan.  Serve warm.


BLUEBERRY MUFFINS










BLUEBERRY MUFFINS

Ingredients :

60  gm  unsalted butter   (1/4 cup)
60  gm  caster sugar   (1/4 cup)
2  whole  egg   (55 gm+- per egg)  (me : use gred A)
120  gm  cake flour   (10 tablespoons)
1  tsp  baking powder
30  ml  fresh milk
1  tsp  vanilla extract
100  gm  blueberries   (1 cup)


Instructions :

Beat butter, sugar till fluffy.
Add egg one at a time, beat well.
Add whisk flour and baking powder, beat till incorporated.
Add milk and vanilla extract.
Add blueberries, fold till well combined.  Do not over mix.
Scoop into paper cups, top with blueberries.
Bake in a preheated oven 200'C for about 17-20 minutes@till cooked.

MUFFIN CHOCOLATE CHIP









MUFFIN CHOCOLATE CHIP GEBU
(Adunan ini tidak perlu menggunakan mixer)




Bahan A :

80  gm  gula perang
90  gm  gula kastor
2  biji  telur gred A


Bahan B :   (diayak)

230  gm  tepung gandum
15  gm  double-action baking powder
30  gm  serbuk koko


Bahan C :

110  gm  susu segar
2  sudu besar  chocolate emulco
150  gm  minyak jagung
100  gm  chocolate chip


Hiasan :   Chocolate chips & Badam Keping


Cara-Cara :

1.  Masukkan Bahan A ke dalam mangkuk dan kacau-kacau sebati dengan whisk.
2.  Campurkan Bahan B dan kacau lagi.
3.  Campurkan Bahan C dan kacau sebati.
4.  Isikan adunan ke dalam paper cup 3/4 penuh.  Masukkan cup ke dalam loyang cupcake.
5.  Tabur sedikit chocolate chip dan badam sebagai hiasan.
6.  Bakar pada suhu 200'C selama 25-30 minit hingga masak atau mengikut oven masing-masing.

DOUBLE CHOCOLATE MUFFINS ...








DOUBLE CHOCOLATE MUFFINS

Bahan-Bahan :

2  cawan  tepung serbaguna   (250 gm)
1  cawan  gula kastor/gula perang   (200 gm)
1/2  cawan  serbuk koko   (60 gm)
1 1/4  sudu teh  baking soda@soda bikarbonate
1/2  sudu teh  garam
1/2  cawan  minyak jagung   (125 ml)
2  biji  telur  (me :  guna gred A)
1/2  cawan  susu segar   (125 ml)
1/2  cawan  sour cream   (130 gm)  (me :  guna yogurt perisa asli)
1  sudu teh  esen vanilla
1  cawan  semi-sweet chocolate chunks or chips, plus more for topping   (175 gm)


Cara-Cara :

1.  Panaskan oven pada suhu 200'C dan lapikkan muffin pan dengan cawan muffin kertas.

2.  Dalam mangkuk besar, campurkan tepung, serbuk koko, baking soda dan garam.  Sebatikan dan ketepikan.

3.  Dalam mangkuk sederhana, masukkan minyak, gula, telur, susu, sour cream dan esen vanilla.  Kacau menggunakan hand whisk.

4.  Masukkan adunan cecair ke dalam adunan kering dan kacau hingga sebati.  Kacau dengan perlahan dan masukkan chocolate chips.  Jangan terlebih kacau nanti muffin menjadi keras selepas dibakar.

5.  Sudukan adunan ke dalam cawan muffin.  Bakar selama 15-18 minit atau hingga masak (bergantung pada oven masing-masing).

MUFFIN PISANG COKLAT ...

Bahan Adunan Kering :

1  cawan  tepung gandum
2  sudu besar  serbuk koko
1/2  sudu teh  soda bikarbonate
1  sudu teh  serbuk penaik@baking powder
Sedikit garam


Bahan Adunan Basah :

3/4  cawan  pisang yang sudah di lenyek
1/2  cawan  minyak jagung/minyak masak
1/2  cawan  gula perang
1  biji  telur gred A yang sudah dipukul sedikit
Chocolate Chips secukupnya


Cara-Cara :

1.  Panaskan oven pada Suhu 170'C selama 15 minit.
2.  Ayakkan semua bahan kering ke dalam mangkuk.  Ketepikan seketika.
3.  Campurkan semua bahan basah ke dalam mangkuk lain dan kacau rata.
4.  Masukkan bahan kering yang sudah diayak ke dalam campuran bahan basah.
5.  Kacau dengan whisk sekejap saja.  Jangan terlebih kacau nanti muffin akan keras selepas dibakar.
6.  Letakkan kertas muffin ke dalam dulang muffin.  Sudukan adunan tadi sehingga 3/4 penuh.
7.  Taburkan chocolate chip dan sedikit badam cincang, jika suka di atas adunan muffin tadi.
8.  Bakar selama 20-25 minit sehingga masak pada Suhu 170'C.





NUTELLA STUFFED DOUBLE CHOC MUFFINS ...








NUTELLA STUFFED DOUBLE
CHOCOLATE MUFFINS

Ingredients :

2 1/2  cups  plain/all-purpose flour   (312 gm)
1/2  cup  cocoa powder   (50 gm)
2  tsp  baking powder
1/4  tsp  salt
2  large  eggs
3/4  cup  caster/granulated sugar   (150 gm)
1  cup  buttermilk   (240 ml)
1/2  cup  vegetable oil   (120 ml)
2  tsp  vanilla extract
1  cup  chocolate chips   (175 gm)
12  tsp  Nutella or more


Instructions :

1.  Preheat the oven to 200'C/400'F.  Line a 12-hole muffin pan with muffin cases, and set aside.

2.  Whisk together the flour, cocoa powder, baking powder and salt.  Set aside.

3.  In a separate large bowl, whisk together the eggs and sugar until thick and lighter in colour.  Add the buttermilk, oil and vanilla extract and whisk until combined.

4.  Add the dry ingredients in thirds and fold in until just combined - do not overmix.  Fold in the chocolate chips.  The mixture will be thick and somewhat lumpy.

5.  Divide the batter evenly between the 12 muffin cases, filling only half way.  Spoon 1 teaspoon of Nutella into the centers, then top with the remaining batter.

6.  Bake for 15-20 minutes, or until a toothpick inserted just off center (to avoid Nutella) comes out clean.

7.  Allow to cool for 5-10 minutes in the pan before transferring them to a wire rack to cool completely.


Buttermilk :   1 cup (240) fresh milk + 1 tablespoon fresh lemon juice or white vinegar.
Stir to combine, and allow to sit for 5-10 minutes until slightly thickened and curdled.
And they're ready to use!

CHOCOLATE-ZUCCHINI MUFFINS ...







CHOCOLATE-ZUCCHINI MUFFINS

Ingredients :

1 1/2  cups  all-purpose flour
1/2  cup  cocoa powder
1  tsp  baking powder
1  tsp  baking soda
1/2  tsp  salt
2  eggs   (large)   ~  room temperature
1  cup  granulated sugar
1/2  cup  milk   ~  room temperature
1/4  cup  canola oil
1  cup  grated zucchini   ~  excess liquid squeezed out
1/2  cup  chocolate chips


Method :

1.  PREHEAT oven to 375'F/190'C.

2.  Stir flour with cocoa powder, baking powder, baking soda and salt in a medium bowl.

3.  Beat eggs with sugar, milk and canola oil in a large bowl until combined.

4.  Stir in flour mixture, then add zucchini and chocolate chips until just combined.  Do not over mix.

5.  Scoop batter into a greased 12-cup muffin pan lined with paper liners.

6.  Bake until a cake tester inserted into cente comes out clean, about 25 minutes.  Cool muffins in pan then transfer to wire rack to cool completely.
