Carrot Apple Muffins

When I first came across this recipe, I thought it would have chunks of apple inside of the muffin but the apple referred to the apple sauce.  For the future, I think, I would put in either pieces of apple or another fruit.  A small amount of nuts would work as well. My granddaughter loves this muffin and she completely finishes it.  It is a joy to see her eat something I made for her. Butternut Squash and Apple Latkes

Potatoes have become a mainstay of Passover.  Potatoes are versatile and can be used in probably hundreds of ways.   Some people moan and groan about how many potatoes they "have to" eat because there is nothing else.  Huh?  Fortunately, there is a plethora of vegetables to cook and be creative with. How many different squash are there?  What about root veggies?  Although, we do not eat beans and peas, there are many other greens,  Kale is big of recent times and spinach and bok choy as a few examples. Eggplant, carrots, radishes, lettuce, parsnips, turnips.........need I say more?  If you are a vegetable eater, the opportunities to make the holiday one of good eating, is endless. I love potatoes and have no desire to run away from them.  I like sweet potatoes and use them throughout the year.  For the potato avoiders butternut squash is a good substitute.  This is an easy and yummy side to make on Pesach or any other day. ...

It is so nice, apples are plentiful so I can bake my apple cakes and make my apple pancakes. Apples go into many dishes, muffins, salads, slaws, pies, cakes ------ use your imagination. I, usually do a lot of apple baking and cooking during the Autumn and Winter. Apple Pancakes Ingredients: 1 1/2 cups unflavored yogurt 2 eggs,  beaten 2 cups gluten-free flour mixture 1 teaspoon baking powder 1/2 teaspoon salt 1/4 cup sugar 1 teaspoon cinnamon plus some (I use cinnamon and vanilla with a heavy hand.) 1 teaspoon vanilla 3 medium apples, chunked in 1/4 inch pieces  oil, for frying Method:  Mix the eggs with the yogurt in a large bowl. Chicken Apple Meatballs in Onion and Apple Gravy - Joy Bauer

Meatballs with apples had instant appeal to me.  I particularly like that the apples are both in the meatballs and in the sauce.  There seem to be a lot of ingredients that go into this  but when I collected everything, it was all in the cupboard or refrigerator. I made the meatballs first and while they were cooking, I prepared the gravy.  The final dish was a dream come true;  I left small apple pieces in the sauce instead of making it plain creamy and this was a good decision.  It was a delight to get these chunks of apple which were still crisp with the creamy sauce and meatballs. I served this with roasted potatoes and a tossed salad. A true success story...... I felt happy feeding this to hubby and even better, I love it. I have been enjoying experimenting with side dishes recently and I hope to share them with you.  this is an apple-sweet potato dish and I think that apples added to almost any dish is a plus.  When I came across this recipe and saw the word, "apples", I was sold.  The orange juice added a nice flavor the remaining ingredients and we liked this dish. Smooth Parsnip and Apple Soup

Not too long ago, I made a soup that featured parsnips and we loved it so much that I decided to make another one using a different recipe.  This time, I called upon Martha Stewart for my resource and we liked this one also but I don't think quite as much as my first one which used coconut milk. Smooth Parsnip and Apple Soup   adapted from Martha Stewar t 1 - 2 tablespoons olive oil 3 prepared sliced leeks 4 parsnips, trimmed, peeled, and cut crosswise into 1-inch pieces 3 carrots, sliced 1/2 onion that was left over, sliced 2 apples, peeled, cored, and cut into 1-inch pieces 1 medium baking potato, peeled and cut into 1-inch pieces 2 cups vegetable broth Salt and pepper Method: Heat oil in a large pot over medium heat.  Add leeks. Sauteed Apples, Squash and Cabbage

I am back to using what is in the house for our meals.  I looked around and found a bag of cabbage and used that as my basis for the following recipe.  What goes with cabbage?  Apples popped into mind.  I like to shred some apples for cole slaw, sometimes and I am sure they will be good with cabbage.  Now, what to do to make the recipe better and a little different which is when I thought of the butternut squash I had with no plans as to how to use it. Sauteed Apples, Squash and Cabbage Ingredients: 1 tablespoon butter 1 - 2 tablespoons olive oil 4 large tart apples - peeled and cubed 2 cups cubed butternut squash, peeled about 12 ounces of shredded cabbage 1/2 cup shredded carrot 2 tablespoons brown sugar 1/2 teaspoon cinnamon or 1/2 teaspoon five spice seasoning 1/2 teaspoon black pepper Method: In a large skillet or saucepan, melt butter over medium heat.  Add the olive oil and heat together....

Sweet Vegetable kugel

What a fabulous combination!!!!!  Apples, sweet potatoes and carrots.  I had to make a few carrot dishes since I bought a huge bag of carrots from Costco.  We are going to love carrots, more each day. Sweet Vegetable Kugel  (Adapted from  Southern Living APRIL 2008) Ingredients 4 cups peeled and grated sweet potato 3 cups peeled and grated carrots  2 cups peeled and grated apples 1 cup brown rice flour 1/3 cup margarine, melted 1/2 cup sugar  1 large egg, beat  1/2 teaspoon salt 3/4 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg Method: Preheat oven to 325°.  Stir together sweet potatoes, next 9 ingredients  in a large bowl until blended. Spoon mixture into 9 x 13 inch baking pan..  Bake  covered , at 325° for 45 minutes.  Increase oven temperature to 350° U ncover and bake 15 minutes or until edges are golden brown.  Eat and enjoy. Chunky Apple Kugel

It  dawned upon me that I like my apple dishes with chunks of apples opposed to sliced or shredded apples or even find diced.  I love those bigger pieces that you can bit into.  I too this recipe and altered the cut of the fruit and frankly, I think it is much better.   Actually, it was delicious when made Sara's way with sliced apples but we like it chunked that much better. I serve this as a side dish but I am sure others use it as a dessert.  If you would serve apple pie, why not apple kugel? We adore apples in anything, apple crumble, crisp, pie, pancakes, cakes, muffins, cupcakes, etc.  Apples have a nice sweetness and a crisp crunch.  It is a gift of the Fall.   When I was choosing recipes, for the SRC, I had come down to two, I wanted to make which I did.  I posted the soup as my choice for the SRC but I also made the German Apple Cake which hubby could not stop raving about. German Apple Pancake

I have a 12 inch cast iron skillet which I love but I hesitate to use because it is heavy. It is also not easy to take out of its designated storage place. It seems like too much, usually, to use. Tonight, I was happy to do that.  It always amazes me how when I am tired, something like this is overwhelming. The lure of this German Apple Pancake pushed my hesitation aside. I lugged the pan out and once it was on the burner, I knew, I could leave it there until my husband came home when he would move it to the oven. For, what I consider an ugly pan, it seems to perform miracles. A side story. When I was a newlywed, we were given some cast iron pans which I never used.  Finally, I gave them away.  I considered them ugly, heavy and of no use.  Little did I know that cast iron pans cook like a dream.  How foolish youth can be.  It is easy to maintain. Apple Almond Brown Rice

  I have been making apple rice dishes for eons and we love them all.  Recently, I tried a new recipe which we ended up preferring to any from the past.  For me, apples make any dish better. I find that rice is an excellent base to show off other food.   Add some vegetables or fruits and you have a new dish, one that is probably a success.  Mix in a juice or a sauce and it is apt to work.   Brown some onions and mushrooms and with a few changes, you will have fried rice.  Boil it. Cabbage is not pretty but it is good to eat, especially with apples. I made this as a side dish for chicken. C reamy Cabbage with Apples Ingredients: 1 teaspoon olive oil 1 large onion, chopped salt and pepper to taste 1 tablespoon white sugar, or to taste 2 tablespoons cider vinegar 1 bag shredded green cabbage 2 large Granny Smith apples - peeled, cored and thickly sliced 1/2 cup vegetable broth 1 pinch nutmeg 1/2 cup sour cream Method: Heat olive oil over medium heat in a large, heavy-bottomed pot. Stir the onion into the pot, season with salt and pepper, and cook and stir over medium-high heat until onion is translucent. Sprinkle in the sugar, then stir in the vinegar. Add the cabbage, stirring well to combine. Cook, uncovered, until cabbage is reduced and starts to soften, 6 to 8 minutes. Stir in apples,and vegetable broth.
