Creamy Cheesy Hash Browns QED

My hubby wanted to do what's for lunch and I went blank.  He usually takes a cheese sandwich to work, everyday, day after day.  You should hear my daughter go on and on about this.  She simply does not understand this.  Actually, neither do I.   If I fall in love with a particular dish, I can eat it daily for a few days and then, I am bored.  Normally, whatever I grab, before I go to work (I go in, in the afternoon.) is whatever is convenient.  If we have leftovers, I will heat them up and that is brunch.  If there is a good cheese, I will eat that with a salad.  If I can't think of anything, I make an egg or a bowl of soup.  It is "catch as catch can." I am a sucker for potatoes and more so when it comes to potato cakes.  These are good, no they are great.  The name is what attracted me to the recipe. The reality of the situation is that someone else knew that this name would attract because not that I have made it, there are no smashed potatoes.  Rather, there are mashed potatoes and these are Mashed Potato Cakes but I like the name so we are going with SMASHED. Potatoes with Personality

I guess you are wondering how potatoes could have personality.  Think about it.  You eat a baked potato.  You have a solid potato, not particular sociable but responsible and likable.  Then, there are those favorite mashed potatoes, warm and cuddly.  Personality is warm and friendly and everyone likes them.  Oh me, French fries are independent souls, staying with their neighbors but holding themselves to the side.  Some are just too pompous for me, thinking their length determines how superior they are.  They are not well liked.  Think about other types of potato dishes and what personalities they have. Green Mashed Potatoes (can be used for Passover)

I am not Dr. Seuss but I CAN make Green Mashed Potatoes.  Besides using broccoli, I want to try this with spinach.  Should I write a book Green Potatoes and Butter? Green Mashed Potatoes I don't usually make colored food other than frosting or baked goods but this had a positive ring to it so I decided to follow through and see what happens. Ingredients: 4 potatoes, peeled 1 bag  broccoli 1/2 cup potato starch salt and pepper to taste 2 onions, chopped and sauteed Method: Boil potatoes for 25 minutes until tender. Add the broccoli to the potatoes for the last three minutes. Chop and saute onions. Drain the potatoes and broccoli. Mash potatoes. Run the broccoli through a food processor using metal blade. Add the broccoli and onions to the potatoes. Add potato starch and seasoning. Mix it all together and put it in greased pan. Bake at 350 degrees for 45 minutes. Cheddar Potato Soup

The cool weather is still with us.  Doesn't the Weather Man know that it is April?  I should look right now and see what to expect.  Without a coat, it is cool and the skies are overcast.  I don't want rain. It is interesting that my classroom is always hot but it is hotter in the winter than in the warmer weather.  On those below freezing days, we had to open the windows not to suffocate from the oppressive heat.  The rest of the day was followed with. "It's freezing" from the kid by the window and "Open the window.  It is hot in here."  So, we continue through the day opening and closing windows.  Some kids are wearing their winter coats, others are down to their polo shirts.  I would blame it on the children but they are right on target. I teach all boys and I keep waiting for one to slug the other over the battle of temperature. I have to leave this for a future post but I bet you don't know the real difference between boys and...

Oven Sweet Potato "Fries" - QED Quick, Easy and Delicious

I love these and don't make them often enough.  Fries are part of our American culture, stemming back to the colonial times, in this country.  I can see how easy, they would be for the early colonists, to cook and eat. Was this their dessert or a side dish or possible a main? All I know, is that I am glad, these have come down the generations and are cooked in a variety of ways.  One of my favorites is the savory sweet potato salad and then there are times that candies sweets, call my name. This time, it was baked fries.  I am attempting to stay away from frying foods.  Note, I say this as I plan to make won-tons, later which will probably be fried.  Back to my more nutritious sweet potatoes.  This is a Quick and Easy recipe.  The baking time is over the goal of thirty minutes but the prep work is fast and if you have the extra time to work on your other dishes, this is perfect.
