Cherry Tomato Couscous - Nigella Lawson
This month, we are focusing on Nigella Lawson in Cook Like A Star. I am having a blast going through the book, Nigella Kitchen. Once upon a time, I put yellow stickies on the recipes that most appealed to me and have only cooked a handful of these so this is my time, to catch up and make some others. I have been buying brown rice couscous since the celiac in the family prohibits us having "real" couscous. I found this recipe and decided it made an easy but filling dish. I followed the directions from the box but used half vegetable broth and half water. I think, I should have used all soup since it needed flavor.
