Claims (8)
- 전위촉매로서 1,3-선택성 리파제 존재하에 포화지방산 또는 그 에스테르 또는 기타 유도체 존재하에 평지종자유의 트리글리세리드를 전위시키는 방법으로서, 전위는 20중량%이상의 에루카산을 함유하는 겨자과 식물유로 수행되며, 지방산 또는 그 유도체는 16이상의 탄소원자를 가지는 사슬로 된 물질인 것을 특징으로 하는 방법.
- 제1항에 있어서, 겨자과식물유는 에루카산을 다량함유하는 평지종자유인 것을 특징으로 하는 방법.
- 제1항에 있어서, 겨자과식물유의 에루카산함량은 35중량%이상인 것을 특징으로 하는 방법.
- 제1항에 있어서, 포화지방산 또는 그 유도체는 베헨산 또는 그 유도체가 풍부한 물질인 것을 특징으로 하는 방법.
- 제1항에 있어서, 에루카산기가 주로 1,3-위치에 있는 고함량 에루카산의 평지종자유는 베헨산 또는 그 유도체를 사용하여 전위되며 이렇게 하여 형성된 에루카산 또는 그 유도체는 촉매적으로 수소화되고, 이 결과 생성된 베헨산 및 유도체는 전위과정으로 재순환시키는 것을 특징으로 하는 방법.
- 제1항에 있어서, 고함량 에루카산의 평지종자유는 2-올레일기가 풍부한 것을 특징으로하는 방법.
- 다음과 같은 트리글리세리드가 존재하는 것을 특징으로 하는 블루움방지특성을 가지는 초콜릿지방조성물. 2-10중량%의 1,3-디베헤노일-2-올레일 트리글리세리드(BOB), 5-14중량%의 1,3-디베헤노일-2-리놀레오일 트리글리세리드(BLnB), 2-10중량%의 1,3-디베헤노일-2-리놀테닐 트리글리세리드(BLNB).
- 제7항에 있어서, 5-7중량%의 BOB, 7-10중량%의 BLnB, 5-7중량%의 BLNB 가 존재하는 것을 특징으로 하는 쵸콜릿지방조성물.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
