[分野]
本発明は、風味(flavor)及び芳香(aroma)のような品質(qualities)を高めた飲料及び飲料の製造方法に関する。
多くの飲料は、より簡単な形態(more convenient form)で再現(duplicate)することが困難な特有の味覚(taste)及び芳香を有している。このような飲料の一例は、コーヒーである。レギュラーコーヒー(regular coffee)では、予めコーヒーポットの中で水を沸騰させておく。そして、粉砕した焙煎コーヒー豆を、沸騰した水(一般的な量は、沸騰した水100mlあたり粉砕した焙煎コーヒー豆10gである。)に直接接触させて沸騰した水で煮沸して抽出(extraction)を行うか、またはパーコレータ(percolator)等を使用して同様に抽出する。得られたエキス(extract)には、カフェイン(caffeine)、タンニン酸(tannic acid)、単糖類(saccharides)、油脂(fats)、プロテイン(proteins)及び種々の芳香成分が含まれている。また得られたエキスは、コーヒーに特有の香り(fragrance)並びに苦味(bitter taste)、渋味(astringent taste)及び酸味(acid taste)を含む特有の複雑な風味を有している。
可溶性コーヒー製品に関する本発明のいくつかの実施の形態は、ドライコーヒー抽出成分(dry coffee extract component)と、微粉砕コーヒー成分(pulverized coffee component)とを有し、微粉砕コーヒー成分は抽出されたものではなく、コーヒーエキス(the dry coffee extract)を乾燥してなるドライコーヒー抽出成分に、微粉砕コーヒー成分が添加される。
以下の説明は、当業者が本発明の一以上の実施の形態を実施し、かつ使用できるようにするものである。本明細書に記載する本質的な特徴は、ここに開示した内容の精神及び範囲から逸脱することなく、以下に記載する以外の実施の形態及び用途にも適用することができる。従って本発明は、以下に示す特定の実施態様に限定することを意図しておらず、本明細書に開示または示唆される本質および特徴に合致する最も広い範囲を包含するものである。

- ドライコーヒー抽出成分と、

前記微粉砕コーヒー成分は抽出されたものではなく、
コーヒーエキスを乾燥してなる前記ドライコーヒー抽出成分に、前記微粉砕コーヒー成分が添加されている可溶性コーヒー製品。 - 前記微粉砕コーヒー成分は、乾燥する前の前記コーヒーエキス及び前記コーヒーエキスを乾燥してなる前記ドライコーヒー抽出成分の両方に添加されている請求項1の可溶性コーヒー製品。
- 前記ドライコーヒー抽出成分は、可溶性コーヒー製品の約70%乃至約90%を構成しており、前記粉砕コーヒー成分は、可溶性コーヒー製品の約10%乃至約30%を構成している請求項1の可溶性コーヒー製品。

粉砕及び微粉砕機械を冷却する工程をさらに有する請求項72に記載の可溶性コーヒー製品の製造方法。 - コーヒーエキス、濃縮コーヒー、ドライコーヒー、コーヒーオイル、コーヒー芳香(蒸留物)、風味粉末、風味オイル、スパイス、粉砕ココア豆または微粉砕ココア豆、粉砕バニラ豆または微粉砕バニラ豆、ビタミン、酸化防止剤、栄養補助食品、食物繊維、オメガ3オイル、オメガ6オイル、オメガ9オイル、フラボノイド、リコピン、セレン、βカロチン、リスベラトロール、野菜エキス、未焙煎コーヒーのドライエキス、未焙煎コーヒーのウェットエキス及びハーブエキスからなる群から選択された少なくとも一つを、前記第1のコーヒーブレンドに添加する工程をさらに有している請求項72に記載の可溶性コーヒー製品の製造方法。
- 前記微粉砕及び粉砕する工程は、約20℃乃至約50℃の温度で行われる請求項72に記載の可溶性コーヒー製品の製造方法。
- 前記微粉砕及び粉砕する工程は、約1℃よりも低い温度で行われる請求項72に記載の可溶性コーヒー製品の製造方法。
- 各工程における装置及びコーヒープロダクトの温度は、約−5℃以下である請求項72に記載の可溶性コーヒー製品の製造方法。
- 前記第1の抽出成分または前記第2の抽出成分に前記第1のドライコーヒーブレンドを添加する工程をさらに有する請求項72に記載の可溶性コーヒー製品の製造方法。
- 前記可溶性コーヒー製品を包装する工程をさらに有する請求項72に記載の可溶性コーヒー製品の製造方法。
- 前記包装する工程は、冷凍環境下で行われる請求項81に記載の可溶性コーヒー製品の製造方法。
- 前記包装する工程は、真空密封する工程及び窒素フラッシングする工程を含んでいる請求項81に記載の可溶性コーヒー製品の製造方法。
- コーヒーソースと、
粉砕装置と、
微粉砕装置と、
コーヒー抽出コンポーネントと、
コーヒー乾燥コンポーネントとを有し、
前記粉砕装置で粉砕されまたは前記微粉砕装置で微粉砕され、且つ抽出コーヒーが前記コーヒーを乾燥するコンポーネントにより乾燥された後に前記コーヒー抽出コンポーネントにより抽出されたコーヒーに、前記微粉砕装置で微粉砕したコーヒーが添加される可溶性コーヒー製品を製造するシステム。 - 前記粉砕装置で粉砕されまたは前記微粉砕装置で微粉砕され且つ前記コーヒーを乾燥するコンポーネントにより前記抽出コーヒーが乾燥される前及び後の両方で、前記コーヒーを抽出するコンポーネントにより抽出されたコーヒーに、前記微粉砕装置で微粉砕されたコーヒーが添加される請求項84のシステム。
