Sheik Karimul Makhdum efforts played a significant role in spreading Islam throughout the Southern Philippines. TAWI–TAWI FOOD DELICACIES WADJIT Tawi-Tawi’s version of biko. It’s a rice cake cooked in coconut milk and brown sugar, but this one uses brown rice instead. TIYULA ITUM The 'Bulalo' equivalent of Tawi Tawi only it has a very spicy soup on it. It is beef with broth mixed with burned grated coconut meat giving it a blackish color SATTI Satti is a famous breakfast in Tawi-Tawi. Made of beef and chicken strips and livers on skewers that are grilled and put on top of a sweet and spicy red sauce. Satti is served with rice molded into cubes and set on coconut leaves beside the meat sauce. It has been the lifeblood of Maranao communities for centuries. Hence, they were called the “people of the lake”. FOOD DELICACIES IN LANAO DEL SUR BARUDBOD Barubod is steamed glutinous rice. But unlike other suman, this one’s milled & soaked in sweetened coconut milk, making it quite a happier version than the rest of its rice varieties TIATEG tiateg is actually a medley of rice flour, egg & coco milk. To achieve those crispy tangles, the mixture swims on a deep-fry in crisscrossing motion. Then it goes on a roll & doused with syrup before it cools down. TIOMPE BANGGALA Tiompe is Maranao pancake made from ground cassava mixed with loads of margarine. It’s quite thick & textured, not my favorite but it was worth the try. PABOROT paborot actually are from ground sticky rice, rolled into balls & deep-fried. Then glazed in thick caramelized sugar.
