Outbreak investigation of salmonella Javiana: fruit mix (December 2019)
Summary:
The FDA, CDC, and state and local partners investigated an epidemic of Salmonella Javiana-related
infections. The cause of this outbreak was determined by epidemiologic and traceback evidence to be a
fruit mix of cantaloupe, honeydew, pineapple, and grapes from Tailor Cut Produce in North Brunswick,
New Jersey. The CDC has declared the outbreak to be finished. The FDA's investigational operations,
which included an inspection, are finished. In interviews, sick persons described consuming cut fruit
offered the week before their illness began. Ill persons reported eating chopped fruit served in nursing
homes, hospitals, hotels, schools, or universities. Several sick persons also reported buying cut fruit from
a supermarket shop chain's multiple sites. According to records, these sites served or sold cut fruit from
Tailor Cut Produce.
The FDA collaborated with the CDC and state partners to track down the chopped fruit and learn more
about potential contamination routes. The common processor was identified as Tailor Cut Produce,
however the source of the contamination was not discovered. When the FDA conducted an inspection at
Tailor Cut Produce, the inspectors discovered the following general deficiencies: the firm's hazard
analysis failed to identify a known or reasonably foreseeable hazard that required a preventive control; the
firm failed to identify a preventive control for a hazard when one was required; and the firm failed to keep
the plant clean and sanitary and in repair. The company is working with the FDA to correct the flaws.
Discussion question
1. Why are cantaloupe, honeydew, pineapple, and grapes prone to salmonella contamination?
Salmonella can pollute waters through direct or indirect contact and is carried by both
domesticated and wild animals. Direct contact of produce or seeds with contaminated manure or
animal wastes can result in contaminated crops in some cases. However, cantaloupes are susceptible
to contamination in a variety of ways, including internalization of bacteria through intact or damaged
rind tissue and contact with contaminated surfaces during processing or preparation.
2. What course of auctions led to the salmonella contamination of fruit mix with cantaloupe,
honeydew, pineapple and grapes?
Salmonella is spread by the fecal-oral route and can be transmitted by • food and water, • by
direct animal contact, and • rarely from person-to-person. An estimated 94% of salmonellosis is
transmitted by food. Humans usually become infected by eating foods contaminated with feces
from an infected animal.
