Abstract
L'invention concerne des méthodes permettant d'identifier des anthocyanines présentant une meilleure stabilité, couleur ou nuance par une méthode de criblage, et de produire des anthocyanines présentant une meilleure stabilité, couleur ou nuance, par exemple, dans des cellules hôtes comprenant une ou plusieurs molécules d'acide nucléique hétérologues à activité glycosyltransférase et une ou plusieurs molécules d'acide nucléique hétérologues à activité acyltransférase.
