Description
Claims (2)
- 엿기름 45~55 중량%을 물에 넣어 부유물 및 침전물 찌꺼기를 제거한 다음 100도℃에서 1시간 정도 끓여 질금물을 생산하는 단계와;
쌀 10~15 중량%을 물에 불린 다음 가열하여 고두밥을 만드는 단계와;
상기 고두밥과 질금물을 50~70℃에서 4시간 이상 발효시킨 후 혼합시키는 단계와;
상기 발효된 식혜에 설탕 23~28 중량%, 고과당 5~8 중량%, 보존료0.2~0.4 중량%, 생강즙 0.1~0.4 중량%, 그리고 대추 2~5 중량%를 혼합시키는 단계와;
상기 식혜에 가압살균솥에서 120~150℃에서 멸균처리하는 단계와;
상기 식혜를 압력차를 이용한 이송배관을 통해 보조탱크로 이동시키며 냉각수로서 식혜를 80℃로 낮춘 후 포장하는 단계로서 대추의 맛과 향을 가지는 것을 특징으로 하는 대추식혜의 제조방법.
- 제1항의 제조방법에 의해서 완성된 대추식혜.
