Abstract
본 발명은 선별된 양파, 사과, 마늘, 생강, 진피를 준비하는 원료준비단계와, 상기 양파, 사과, 마늘, 생강을 동결건조하는 동결건조단계와, 상기 동결건조된 양파, 사과, 마늘, 생강과 상기 진피를 각각 분쇄하는 분말준비단계와, 선별된 팔각, 회향, 정향, 계피를 건조하는 한약재건조단계와, 상기 건조된 팔각, 회향, 정향, 계피를 분쇄하는 한약재분쇄단계와, 상기 한약재분쇄단계를 통해 생성된 팔각분말, 회향분말, 정향분말, 계피분말을 혼합하여 오향분을 제조하는 오향분제조단계와, 상기 분말준비단계를 통해 제조된 양파분말, 사과분말, 마늘분말, 생강분말, 진피분말에 상기 오향분과 흑후추 분말과 소금을 배합하여 염지분말을 제조하는 배합단계와, 상기 염지분말에 물을 혼합하는 혼합물제조단계를 포함하는 돈육가공용 염지제의 제조방법에 있어서, 상기 배합단계와 상기 혼합물제조단계 사이에는, 돈육 내의 흡수율을 향상시키기 위해 상기 염지분말의 입자가 균일하도록 상기 염지분말을 재분쇄하는 재분쇄단계를 포함하며, 상기 동결건조단계는, 상기 양파, 사과, 마늘, 생강의 갈변현상을 방지하기 위해 -30℃ 내지 -10℃의 저온에서 동결건조하고, 상기 한약재건조단계는, 돈육 내의 균을 제거하기 위해 건조된 산초를 더 포함하고, 상기 한약재분쇄단계는, 상기 건조된 산초를 분쇄하여 제조된 산초분말을 더 포함하며, 상기 오향분제조단계는, 상기 산초분말을 더 혼합하고, 상기 산초분말 100중량부에 대하여 상기 팔각분말 50 내지 100중량부, 회향분말 50 내지 100중량부, 정향분말 50 내지 100중량부, 계피분말 50 내지 100중량부를 혼합하여 오향분을 제조하며, 상기 배합단계는,물에 분산되면서 보존성이 용이한 탈지분유를 배합하며, 상기 양파분말 100중량부에 대해 상기 사과분말 30 내지 40중량부, 상기 마늘분말 30 내지 40중량부, 상기 생강분말 10 내지 20중량부, 상기 탈지분유 90 내지 110중량부, 상기 진피분말 10 내지 20중량부, 상기 흑후추 분말 1 내지 5중량부, 상기 소금 60 내지 80중량부, 상기 오향분 30 내지 40중량부를 배합한다.

또한, 상기 혼합물제조단계는, 상기 염지분말 100중량부에 대해 물 100 내지 200중량부를 혼합하며, 상기 혼합물제조단계 후에는, 상기 염지분말 내로 물이 흡수되도록 상기 혼합물을 2℃ 내지 20℃에서 30 내지 60분 동안 숙성시키는 숙성단계를 포함할 수 있다.

- 선별된 양파, 사과, 마늘, 생강, 진피를 준비하는 원료준비단계와, 상기 양파, 사과, 마늘, 생강을 동결건조하는 동결건조단계와, 상기 동결건조된 양파, 사과, 마늘, 생강과 상기 진피를 각각 분쇄하는 분말준비단계와, 선별된 팔각, 회향, 정향, 계피를 건조하는 한약재건조단계와, 상기 건조된 팔각, 회향, 정향, 계피를 분쇄하는 한약재분쇄단계와, 상기 한약재분쇄단계를 통해 생성된 팔각분말, 회향분말, 정향분말, 계피분말을 혼합하여 오향분을 제조하는 오향분제조단계와, 상기 분말준비단계를 통해 제조된 양파분말, 사과분말, 마늘분말, 생강분말, 진피분말에 상기 오향분과 흑후추 분말과 소금을 배합하여 염지분말을 제조하는 배합단계와, 상기 염지분말에 물을 혼합하는 혼합물제조단계를 포함하는 돈육가공용 염지제의 제조방법에 있어서,
상기 배합단계와 상기 혼합물제조단계 사이에는, 돈육 내의 흡수율을 향상시키기 위해 상기 염지분말의 입자가 균일하도록 상기 염지분말을 재분쇄하는 재분쇄단계를 포함하며,
상기 동결건조단계는, 상기 양파, 사과, 마늘, 생강의 갈변현상을 방지하기 위해 -30℃ 내지 -10℃의 저온에서 동결건조하고,
상기 한약재건조단계는, 돈육 내의 균을 제거하기 위해 건조된 산초를 더 포함하고,
상기 한약재분쇄단계는, 상기 건조된 산초를 분쇄하여 제조된 산초분말을 더 포함하며,
상기 오향분제조단계는, 상기 산초분말을 더 혼합하고, 상기 산초분말 100중량부에 대하여 상기 팔각분말 50 내지 100중량부, 회향분말 50 내지 100중량부, 정향분말 50 내지 100중량부, 계피분말 50 내지 100중량부를 혼합하여 오향분을 제조하며,

- 청구항 1에 있어서,
상기 혼합물제조단계는, 상기 염지분말 100중량부에 대해 물 100 내지 200중량부를 혼합하며,
