Abstract
본 발명은 등심이나 안심인 돈육을 준비하는 돈육준비단계와, 상기 준비된 돈육의 비계를 제거하고 0.5 내지 3cm 두께로 세절하는 세절단계와, 상기 세절된 돈육을 일정한 형상으로 성형하여 성형물로 제조하는 성형단계와, 양파, 사과, 마늘, 생강을 선별한 후 세척하여 준비하는 염지제재료준비단계와, 상기 준비된 양파, 사과, 마늘, 생강에 멸균우유, 우스터소스, 청주, 매실원액 효소, 후추분말, 소금, 사과효소를 혼합한 후 분쇄하여 염지제를 제조하는 염지제제조단계와, 상기 제조된 염지제를 1℃ 내지 5℃에서 20 내지 30시간 동안 숙성시키는 염지제숙성단계와, 상기 성형물 100중량부에 대하여 상기 숙성된 염지제 5 내지 10중량부를 배합하여 배합물을 제조하는 배합단계와, 상기 배합물을 진공흡착하여 포장하는 진공포장단계와, 상기 진공포장된 배합물을 저온숙성시키는 저온숙성단계를 포함하여 구성된다.

Claims (5)
- 등심이나 안심인 돈육을 준비하는 돈육준비단계와,
상기 준비된 돈육의 비계를 제거하고 0.5 내지 3cm 두께로 세절하는 세절단계와,
상기 세절된 돈육을 일정한 형상으로 성형하여 성형물로 제조하는 성형단계와,
양파, 사과, 마늘, 생강을 선별한 후 세척하여 준비하는 염지제재료준비단계와,
상기 준비된 양파, 사과, 마늘, 생강에 멸균우유, 우스터소스, 청주, 매실원액 효소, 후추분말, 소금, 사과효소를 혼합한 후 분쇄하여 염지제를 제조하는 염지제제조단계와,
상기 제조된 염지제를 1℃ 내지 5℃에서 20 내지 30시간 동안 숙성시키는 염지제숙성단계와,
상기 성형물 100중량부에 대하여 상기 숙성된 염지제 5 내지 10중량부를 배합하여 배합물을 제조하는 배합단계와,
상기 배합물을 진공흡착하여 포장하는 진공포장단계와,
상기 진공포장된 배합물을 저온숙성시키는 저온숙성단계를 포함하여 구성되는 돈육 염지방법.
- 청구항 1에 있어서,
상기 염지제는, 상기 멸균우유 100중량부에 대해 상기 양파 80 내지 120중량부, 상기 사과 23 내지 43중량부, 상기 마늘 1 내지 14중량부, 상기 생강 1 내지 14중량부, 상기 우스터소스 1 내지 15중량부, 상기 청주 1 내지 17중량부, 상기 매실원액 효소 1 내지 12중량부, 상기 후추분말 1 내지 5중량부, 상기 소금 1 내지 14중량부, 상기 사과효소 1 내지 15중량부를 혼합하여 구성되는 돈육 염지방법.
- 청구항 2에 있어서,
상기 저온숙성단계는, 상기 진공포장된 배합물을 1℃ 내지 5℃에서 20 내지 30시간 동안 저온숙성시키는 돈육 염지방법.
- 청구항 2에 있어서,
상기 저온숙성단계는, 상기 진공포장된 배합물을 0℃ 내지 1℃의 물 속에 넣어 20 내지 30시간 동안 저온숙성시키는 돈육 염지방법.
- 청구항 1 내지 청구항 4 중 어느 하나의 방법으로 제조된 염지돈육.
