Abstract

PRODUTO PROTÉICO OBTIDO A PARTIR DE RESÍDUOS SÓLIDOS DE CERVEJARIA E SEU MÉTODO DE PRODUÇÃO. A tecnologia atual, em geral, está relacionada à indústria de processamento de alimentos, ou seja, a um método de processamento de resíduos sólidos de cervejaria. A invenção permite aumentar o nível de frações de alimentos extraídos dos resíduos sólidos de cervejaria até 90-95% e aumentar o teor de proteína no concentrado proteico de cevada em até 50-65% em peso (sólido seco). O método implica que os resíduos sólidos de cervejeira são submetidos à desagregação por meio de uma peneira vibratória, moendo em um moinho coloidal com adição de água ou de líquido resultante da centrifugação na proporção de 0,5:1 a 1:1 para resíduos sólidos de cervejaria, a fim de produzir uma massa pastosa homogênea de resíduos sólidos de cervejaria; e então esta massa é submetida ao processamento por meio de um extrator de rosca para sua posterior moagem e divisão em 2 frações: suspensão com o nível de umidade de 90-95%, e casca moída de resíduos sólidos de cervejaria com o nível de umidade de 60-75% adequado para seu posterior uso industrial. Em seguida, a suspensão é fornecida para filtragem mecânica a fim de remover a casca moída, bombeada para dentro do recipiente e seca a fim de obter o nível de umidade máxima de 7%.
