Abstract
El método de producción de un producto alimenticio envasado, que comprende: cocinar un producto alimenticio a una temperatura de cocción de al menos 100 °C, introduciendo el producto alimenticio cocido en una atmósfera de vapor sobrecalentado, la atmósfera de vapor sobrecalentado que contiene menos de 3% de oxígeno y que tiene una temperatura de al menos 120 °C, secar el producto alimenticio a un valor de agua aw en el intervalo de 0.70 a 0.92, en la atmósfera de vapor sobrecalentado, el envasado del producto alimenticio en un recipiente de envasado y herméticamente sellado del recipiente de envasado, y productos alimenticios envasados en un envase impermeable al O2, obtenible por un método de conformidad con cualquiera de las reivindicaciones precedentes, donde el producto alimenticio tiene un valor de agua aw en el intervalo de 0.70 a 0.92.
