Abstract

 本発明による発酵ホエイ調製物は、固形分濃度が11~35重量%で、かつ、pHが6.5~8.0に調整された、ホエイタンパク質水溶液を、高温殺菌した後、乳酸発酵させ、得られた発酵液をそのまま均質化することによって得られるものである。該発酵ホエイ調製物は、発酵による独特で良好な風味と同時に、スッキリとした爽やかな風味とを併せ持ち、かつ、舌触りが滑らかな食感を持つものである。さらに、該発酵ホエイ調製物は、熱安定性と安全性にも優れている。
