Claims (3)
- 건대추와 물을 혼합 및 가열하여 상기 건대추의 유효성분을 추출한 대추추출물을 얻는 대추추출물 제조단계;
100 내지 105℃에서 가열 중인 상기 대추추출물에 쌀조청을 투입한 후, 가열 상태에서 교반시켜 대추조청을 얻는 대추조청 제조단계;
달인 주정, 발효 매실청, 볶은 소금 및 상기 대추조청을 혼합하여 대추혼합물을 얻는 대추혼합물 제조단계; 및
상기 대추혼합물에 고춧가루를 투입한 후 혼합하여 대추 고추장을 얻는 대추 고추장 제조단계;를 포함하는 것을 특징으로 하는 대추 고추장의 제조방법. - 제 1항에 있어서,
상기 대추혼합물 제조단계는,
70 내지 90℃에서 주정을 가열하여 달이는 달인 주정 제조단계;
수분이 제거되도록 50 내지 60℃에서 소금을 가열하여 볶는 볶은 소금 제조단계;
상기 달인 주정과 상기 발효 매실청을 혼합하는 주정 및 매실청 혼합단계; 및
상기 볶은 소금과 상기 대추조청을 상기 달인 주정 및 상기 발효 매실청에 첨가하여 혼합하는 소금 및 대추조청 첨가단계;를 포함하는 것을 특징으로 하는 대추 고추장의 제조방법. - 제 1항에 있어서,
상기 대추 고추장 제조단계 이후에,
상기 대추 고추장을 용기에 밀봉한 후 실온에 보관하면서 숙성시키는 대추 고추장 숙성단계;를 더 포함하는 것을 특징으로 하는 대추 고추장의 제조방법.
