분획물의 성분 분석 결과, 총 폴리페놀 함량은 에틸아세테이트 분획물, 부탄올 분획물, 물 잔류물, 헥센 분획물 순으로 나타났다. 또한, 총 플라보노이드 함량 역시 에틸아세테이트 분획물에서 가장 높았으며, 부탄올 분획물과 물 잔류물은 유사한 8.5~9.9mg/g을 나타내었다. 반면, 총 당 및 환원당 함량은 각각 부탄올 분획물에서 가장 높게 나타났으며, 이후 물 잔류물 순으로 나타났다. 따라서, 람부탄 껍질 추출물의 헥센 분획물 및 에틸아세테이트 분획물은 페놀성 배당체가 주요 성분으로 예상되며, 다양한 생리 활성을 나타내리라 판단되었으며, 실제 강력한 항산화 활성을 나타냄을 확인하였다. 표 4에 나타낸 바와 같이, 항세균 활성 대조구로 사용된 엠피실린(1μg/disc)은 대장균(E. coli)과 녹농균(P. aeruginosa)을 제외한 세균에 대해 강력한 항세균 활성을 나타내었다. 또한, 항진균제인 마이코나졸(1μg/disc) 역시 사용된 진균에 대해 우수한 항진균 활성을 나타내었다. 람부탄 껍질 에탄올 추출물의 분획물 중에서는 헥센 분획물과 에틸아세테이트 분획물에서만 우수한 항세균 활성이 나타났으며, 특히 람부탄 껍질의 에탄올 추출물과 달리, Listeria monocytogens 및 Bacillus subtilis에서도 강력한 항세균 활성을 나타내었다. 상기의 결과는 람부탄 껍질 추출물 및 이의 헥센 분획물, 에틸아세테이트 분획물은 식중독 유발균, 병원성 균들의 제어에 효과적으로 이용 가능함을 제시하고 있다. 실시예 1 및 실시예 3에서 얻은 람부탄 껍질 추출물 및 이의 헥센 분획물과 에틸아세테이트 분획물을 대상으로 항균 활성에 대한 열 안정성 및 산 안정성을 확인하였다. 상기 시료들은 100℃에서 1시간 열 처리, pH 2(0.01M HCl)에서 1시간 처리시 항균 활성의 심각한 감소가 나타나지 않아 높은 열 및 산 안정성을 나타내었다. 따라서, 상기의 람부탄 껍질 추출물 및 이의 활성 분획물들은 다양한 가공 공정하에서도 우수한 항균 활성을 유지할 것으로 예상된다.The antibacterial activity against the antibacterial activity and the acid stability of the antibacterial activity of the antibacterial extracts obtained in Example 1 and Example 3 and the hexane fraction and ethyl acetate fraction thereof were confirmed.
