Claims (3)
- 다시마, 미역, 톳, 파래, 청각, 우뭇가사리, 김 중에서 선택된 어느 하나 이상의 해조류 60 내지 80중량 %, 포도당, 과당, 갈락토오스, 락토오스 중에서 선택된 어느 하나 이상의 단당류 10 내지 30중량 %, 차전자피 3 내지 10중량 %, 밀가루 1 내지 10중량 %, 구연산, 사과산 중에서 선택된 어느 하나 이상의 산패방지제 0.5 내지 2중량 %, 고추, 고추냉이, 겨자, 참깨, 계피, 카레, 생강 중에서 선택된 어느 하나 이상의 기호제 1 내지 10중량 % 및 들깨를 3 내지 10중량 % 포함하는 것을 특징으로 하는 해조 쌈피.
- 건조 염장 해조류를 40 내지 50℃의 온수 2 내지 3배량으로 3 내지 4시간 간격으로 물갈이를 해주면서 탈염하는 제1공정,
상기 탈염된 해조류 60 내지 80중량 %와 차전자피 3 내지 10중량 %를 혼합하여 곱게 조분쇄하는 제2공정,
상기 조분쇄된 해조류에 단당류 10 내지 30중량 %, 산패방지제 0.5 내지 2중량 %, 밀가루 1 내지 5중량 % 및 들깨 3 내지 10중량 %를 혼합하고, 1 내지 3배의 물을 가한 후 0.5 내지 1시간 동안 80 내지 100℃로 끓여 호화시키는 제3공정,
상기 호화된 해조류 풀을 4 내지 25℃의 냉수로 급랭하고 냉각시킨 후 기호제 1 내지 10중량 % 첨가하고 혼합 교반, 분쇄하는 제4공정,
상기의 해조류 풀을 직경 13 내지 20㎝의 형틀에 주입하여 성형, 건조한 후 분리하여 건조실에서 40 내지 80℃의 6 내지 8시간 열풍 건조하여 0.2 내지 1.5㎜ 두께의 해조 쌈피를 제조하는 제5공정으로 이루어진 것을 특징으로 하는 해조 쌈피의 제조방법. - 제2항에 있어서,
상기 형틀의 형상은 원형이나 3각형 내지 8각형의 다각형 및 별, 하트, 꽃 형태인 것을 특징으로 하는 해조 쌈피의 제조방법.
