Abstract

PURPOSE: To prepare powdery honey without deteriorating its original color, taste and flavor, by heating honey under reduced pressure to remove major part of water, followed by cooling, solidifying and crushing the product.
CONSTITUTION: Honey is concentrated to a water content of ≤1.0wt% by heating at ≤100°C by a jacketed vessel furnished with a ribbon-stirrer or a film-evaporator with mechanical stirrer. The concentrated liquid is spontaneously or forcedly cooled to solidify. The solid is crushed to about 40W100 mesh powder.
