Abstract

PURPOSE: A modifier for citrus fruits that contains one selected from specific compounds a part of which are novel as the effective component, thus enabling the control of the amount of organic acids in the fruits without adverse effect on the trees and the coloring of the fruits.
CONSTITUTION: Said modifier for citrus fruits contains a compound of R-X-Y [R is lower alkyl, alicyclic alkyl, formula I (X1 is H, lower alkyl, lower alkoxy; n is 1W5; m is 0, 1); X is COO, SCO, NHCO, SO2; Y is formula II and III (R1 is OH, lower alkoxy] as the effective component. It can control the saccharide and organic acid metabolisms in the fruits without adverse effect on the trees and coloring of the fruits. When the amount of organic acids in the fruits is large, the storability is good and when it is small, the fruits can be picked early. Thus, the shipment of the fruits can be easily controlled. In the above compounds, those bearing SCO as X are novel except compounds of formula IVWVI.
