Description
高タンパク質含有量を含有する組成物を提供することがしばしば有利である。例えば、高齢者が製品を消費する能力が低下し得るのでこれが生じる。あるいは、スポーツに参加している最中のスポーツマン又はスポーツウーマンは、栄養を必要とするかもしれないが、前述の栄養を消費するのにかかる時間は彼らの能力を妨げてはならない。
驚くべきことに、本発明者らは、(i)サッカリド成分、及び/又は(ii)ホスフェート成分及び/又は(iii)シトレート成分から選択される少なくとも1つの成分を含有するホエイタンパク質を含むタンパク質源を使用することにより、組成物が味が苦くないように調製されることを発見した。更に、前術の組成物は、組成物の1~20重量%の高タンパク質含量を有し得るが、同時に低粘度を有する。
第1の定義された実施形態によれば、本発明の加熱滅菌組成物は、ホエイタンパク質を含有するタンパク質源を含む。
1.溶媒抽出による植物成分の任意の脱肥育化。
2.水又は弱アルカリ(mild alkali)中の再可溶化、不溶物(繊維)の分離及び抽出物の熱処理。
3.酸沈殿及びタンパク質の洗浄によるオリゴサッカリド及びフィチン酸の分離。
4.沈殿した大豆タンパク質の任意の中和及び可溶化。
好ましい態様によれば、本発明の加熱滅菌組成物に含有される少なくとも1つの成分は、単独又は混合物として存在し得る、(i)好ましくはモノサッカリド、ジサッカリド、オリゴサッカリド又はポリサッカリドである、サッカリド成分である又はそれを含む。
更なる態様にしたがって、本発明の加熱滅菌組成物は、ビタミン、ミネラル及び微量元素から選択される微量栄養素も含み、これらは単独で又は組み合わせて存在し得る。あるいは、いくつかの態様において、本発明の加熱滅菌組成物は、微量栄養素を含有しないこともある。
したがって、特に好ましい実施形態によれば、本発明の根底にある問題は、1~20重量%の量のホエイタンパク質を含有するタンパク質源並びに(i)組成物の0.5~7.5重量%の量のサッカリド成分、及び/又は(ii)組成物の0.03~3重量%の量のホスフェート成分、及び/又は
(iii)組成物の0.07~5重量%の量のシトレート成分から選択される少なくとも1つの成分を含む、加熱滅菌組成物、より好ましくは本明細書に記載の加熱滅菌組成物の調製方法により解決される。
ホエイタンパク質並びに少なくとも1つの成分を含むタンパク質源の水溶液をpH5.5~9.5で、滅菌温度で加熱するステップを含み、該成分は、
(i)加熱滅菌組成物の0.5~7.5重量%の量のサッカリド成分、及び/又は
(ii)加熱滅菌組成物の0.03~3重量%の量のホスフェート成分、及び/又は
(iii)加熱滅菌組成物の0.07~5重量%の量のシトレート成分から選択される。
本明細書に記載の本発明の方法によれば、ホエイタンパク質を含有するタンパク質源が使用される。
好ましい態様によれば、本発明の方法において使用される少なくとも1つの成分は、単独又は混合物として存在し得る、(i)好ましくはモノサッカリド、ジサッカリド、オリゴサッカリド又はポリサッカリドである、サッカリド成分である又はそれを含む。
更に、1つの他の好ましい態様によれば、微量栄養素を本発明の方法のタンパク質源に添加し得る。このような微量栄養素には、単独又は組み合わせて存在し得る、ビタミン、ミネラル及び微量元素から選択され得る。あるいは、本発明の方法に使用されるタンパク質源は微量栄養素を全く含まない又は微量栄養素が本発明の方法に添加され得ない。
以降の図は、本発明を更に例示することを意図する。それらの例は、本発明の主題を制限することを意図するものではない。
25℃で混合した0.26重量%の組成物Na3-シトレート(2.6gNa3-シトレート・2H2O/リットル)を添加し、その後NaOH(1mol/L)でpHをpH7.2に調整した。
25℃で混合した0.06重量%の組成物のNaH2PO4(0.6gのNaH2PO4 H2O/リットル)を添加し、その後NaOH(1mol/L)でpHをpH7.5に調整した。
25℃で混合した0.06重量%の組成物のNaH2PO4(0.6gのNaH2PO4 H2O/リットル)及び0.13重量%の組成物Na3-シトレート(1.3gNa3-シトレート・2H2O/リットル)を添加し、その後NaOH(1mol/L)でpHをpH7.2に調整した。
実施例1~4及び図5~13に更に示されるように調製されたサンプルに対して実施された熱安定性試験は以下のようにして行った。
Claims (17)
- 加熱滅菌液体組成物であって、
前記加熱滅菌液体組成物の8重量%~20重量%の量のホエイタンパク質を含み、
前記加熱滅菌液体組成物の0.07重量%~0.26重量%の量のシトレート成分を含み、
5.5~9.5のpHを有する、加熱滅菌液体組成物。 - 前記ホエイタンパク質が、ホエイタンパク質単離物又はホエイタンパク質濃縮物から選択される、請求項1に記載の加熱滅菌液体組成物。
- 7.0~8.5のpHを有する、請求項1又は2に記載の加熱滅菌液体組成物。
- 前記加熱滅菌液体組成物の0.03重量%~0.08重量%の量のホスフェート成分を更に含む、請求項1~3のいずれか一項に記載の加熱滅菌液体組成物。
- 前記加熱滅菌液体組成物の0.5重量%~1重量%の量のサッカリド成分を更に含む、請求項1~4のいずれか一項に記載の加熱滅菌液体組成物。
- 前記サッカリド成分が、スクロース、マルトデキストリン、ラクトース又はグルコースから選択される糖である、請求項5に記載の加熱滅菌液体組成物。
- 20℃/100s-1で600mPa.s未満の粘度を有する、請求項1~6のいずれか一項に記載の加熱滅菌液体組成物。
- 20℃/100s-1で200mPa.s未満の粘度を有する、請求項7に記載の加熱滅菌液体組成物。
- 経腸組成物又は非経口組成物である、請求項1~8のいずれか一項に記載の加熱滅菌液体組成物。
- 栄養組成物、栄養サプリメント、乳児用フォーミュラ、成人用フォーミュラ、フォローオンフォーミュラ、ベビーフードフォーミュラ、乳児用穀物フォーミュラ、グローイングアップミルク、乳児用食品サプリメント、小児用食品サプリメント、小児用フォーミュラ、成人用栄養組成物、妊婦用栄養サプリメント、肥満用フォーミュラ、高齢者用栄養組成物又はヘルスケアフォーミュラである、請求項1~9のいずれか一項に記載の加熱滅菌液体組成物。
- 栄養を必要としている人への栄養の提供において使用するための、請求項1~10のいずれか一項に記載の加熱滅菌液体組成物。
- 前記人は、高齢者、病気の状態にある人、病気の状態から回復しつつある人、栄養失調の人、又は、スポーツマン、スポーツウーマン、活動的な高齢者などの健康な人である、請求項11に記載の加熱滅菌液体組成物。
- 加熱滅菌液体組成物の重量に基づき8重量%~20重量%の量のホエイタンパク質を含む加熱滅菌液体組成物を調製する方法であって、前記方法は、ホエイタンパク質を含む水溶液をpH5.5~9.5で、滅菌温度で加熱する加熱滅菌ステップを含み、前記水溶液は、前記加熱滅菌液体組成物の0.07重量%~0.26重量%の量のシトレート成分を含む、方法。
- 前記水溶液は、前記加熱滅菌液体組成物の0.03重量%~0.08重量%のホスフェート成分を更に含む、請求項13に記載の方法。
- 前記水溶液は、前記加熱滅菌液体組成物の0.5重量%~1重量%のサッカリド成分を更に含む、請求項13又は14に記載の方法。
- 前記加熱滅菌ステップの後、加熱滅菌液体組成物の8重量%~20重量%の量のホエイタンパク質を含む加熱滅菌液体組成物が得られ、前記加熱滅菌液体組成物は、20℃/100s-1で600mPa.s未満の粘度を有する、請求項13~15のいずれか一項に記載の方法。
- 前記加熱滅菌液体組成物は、20℃/100s-1で200mPa.s未満の粘度を有する、請求項16に記載の方法。
