前記先行工程で得られたナノろ過保持液の電気透析を行う工程と、

限外ろ過保持液が、少なくとも乾燥抽出物の14%に等しい全窒素含有物質含有量を有する。

本発明の乳タンパク質組成物は以下の任意の特徴を、それらだけで又は全ての可能な技術的組み合わせに従って、有することも可能である。
上記に定義される方法により得られ得る乳タンパク質組成物において、カルシウム含有量対リン含有量の比が0.65を超える。
この場合、前記脱ミネラル乳タンパク質組成物は、
カルシウムを全窒素含有物質1グラム当たり11ミリグラム未満の含有量で、
ナトリウムを全窒素含有物質1グラム当たり5ミリグラム未満の含有量で、
マグネシウムを全窒素含有物質1グラム当たり3ミリグラム未満の含有量で、
カリウムを全窒素含有物質1グラム当たり5.5ミリグラム未満の含有量で、
塩化物を全窒素含有物質1グラム当たり1.7ミリグラム未満の含有量で、
リンを全窒素含有物質1グラム当たり8.5ミリグラム未満の含有量で、含み得る。
より詳細には、前記脱ミネラル乳タンパク質組成物は、
カルシウムを全窒素含有物質1グラム当たり7.7ミリグラム未満の含有量で、
ナトリウムを全窒素含有物質1グラム当たり3.65ミリグラム未満の含有量で、
マグネシウムを全窒素含有物質1グラム当たり2.15ミリグラム未満の含有量で、
カリウムを全窒素含有物質1グラム当たり3.70ミリグラム未満の含有量で、
塩化物を全窒素含有物質1グラム当たり1.5ミリグラム未満の含有量で、
リンを全窒素含有物質1グラム当たり7.7ミリグラム未満の含有量で、含み得る。
上記に定義される方法により得られ得る脱ミネラル乳タンパク質組成物の総タンパク質に対する天然タンパク質の百分率が85を超える。
前記脱ミネラル乳タンパク質組成物の総タンパク質に対する天然タンパク質の百分率が90を超える。
前記組成物中のA-ラクトアルブミンタンパク質のクラスター化率が5%未満である。
前記方法により得られ得る脱ミネラル乳タンパク質組成物の粒子のD4,3型の平均直径が0.3マイクロメートル未満である。
前記脱ミネラル乳タンパク質組成物の粒子のD4,3型の平均直径が0.2マイクロメートル未満であり、体積で粒子の少なくとも40%が0.15マイクロメートル未満のサイズを有する。
Claims (17)
- 乳タンパク質組成物を調製又は提供する工程と、
前記乳タンパク質組成物の限外ろ過を行う工程と、
前記限外ろ過を行う工程で得られた限外ろ過保持液のナノろ過を行う工程と、
前記ナノろ過を行う工程で得られたナノろ過保持液の電気透析を行う工程と、
を少なくとも含み、
イオン交換樹脂を通過させることを含む工程を含まないことを特徴とする、
脱ミネラル乳タンパク質組成物を製造する方法。 - 前記限外ろ過保持液が、少なくとも乾燥抽出物の14%に等しい全窒素含有物質含有量を有することを特徴とする、請求項1に記載の方法。
- 前記乳タンパク質組成物がチーズホエーであることを特徴とする、請求項1又は請求項2に記載の方法。
- 前記チーズホエーが有機農法に由来することを特徴とする、請求項3に記載の方法。
- 前記乳タンパク質組成物が、
生乳を提供する工程と、
前記生乳をクリーム化、熱処理及び除菌する工程と、
前記クリーム化、熱処理及び除菌する工程で得られた乳を膜で精密ろ過する工程と、
精密ろ過の透過物を回収して乳タンパク質組成物を形成する工程と、
を少なくとも含む方法に由来することを特徴とする、
請求項1又は請求項2に記載の方法。 - 前記精密ろ過の膜が、0.1~0.2マイクロメートルの多孔性を有することを特徴とする、請求項5に記載の方法。
- 前記生乳が有機農法に由来することを特徴とする、請求項5又は請求項6に記載の方法。
- 前記脱ミネラル乳タンパク質組成物におけるカルシウム含有量のリン含有量に対する比が0.65を超えることを特徴とする、請求項1~請求項7のいずれか一項に記載の方法。
- 前記脱ミネラル乳タンパク質組成物が、
カルシウムを、全窒素含有物質1グラム当たり11ミリグラム未満の含有量で、
ナトリウムを、全窒素含有物質1グラム当たり5ミリグラム未満の含有量で、
マグネシウムを、全窒素含有物質1グラム当たり3ミリグラム未満の含有量で、
カリウムを、全窒素含有物質1グラム当たり5.5ミリグラム未満の含有量で、
塩化物を、全窒素含有物質1グラム当たり1.7ミリグラム未満の含有量で、
リンを、全窒素含有物質1グラム当たり8.5ミリグラム未満の含有量で、
含むことを特徴とする、
請求項8に記載の方法。 - 前記脱ミネラル乳タンパク質組成物が、
カルシウムを、全窒素含有物質1グラム当たり7.7ミリグラム未満の含有量で、
ナトリウムを、全窒素含有物質1グラム当たり3.65ミリグラム未満の含有量で、
マグネシウムを、全窒素含有物質1グラム当たり2.15ミリグラム未満の含有量で、
カリウムを、全窒素含有物質1グラム当たり3.70ミリグラム未満の含有量で、
塩化物を、全窒素含有物質1グラム当たり1.5ミリグラム未満の含有量で、
リンを、全窒素含有物質1グラム当たり7.7ミリグラム未満の含有量で、
含むことを特徴とする、
請求項8又は請求項9に記載の方法。 - 前記脱ミネラル乳タンパク質組成物における総タンパク質に対する未変性の天然タンパク質の百分率が85を超えることを特徴とする、請求項1~請求項7のいずれか一項に記載の方法。
- 前記脱ミネラル乳タンパク質組成物における総タンパク質に対する未変性の天然タンパク質の百分率が90を超えることを特徴とする、請求項11に記載の方法。
- 前記脱ミネラル乳タンパク質組成物中のアルファ-ラクトアルブミンタンパク質のクラスター化率が5%未満であること特徴とする、請求項11又は請求項12に記載の方法。
- 前記脱ミネラル乳タンパク質組成物の粒子のD4,3型の平均直径が0.3マイクロメートル未満であることを特徴とする、請求項1~請求項7のいずれか一項に記載の方法。
- 前記脱ミネラル乳タンパク質組成物の粒子のD4,3型の平均直径が0.2マイクロメートル未満であり、体積で粒子の少なくとも40%が0.15マイクロメートル未満のサイズを有することを特徴とする、請求項14に記載の方法。
- 前記脱ミネラル乳タンパク質組成物が乳児用ミルクを開発するための成分として使用される、請求項1~請求項15のいずれか一項に記載の方法。
- 前記乳児用ミルクが有機農法に由来することを特徴とする、請求項16に記載の方法。
