Description
チクロ 砂糖の30倍の甘さ
ステビオサイド 砂糖の100〜250倍の甘さ
モグロサイドV 砂糖の100〜300倍の甘さ
レバウディオサイドA 砂糖の150〜300倍の甘さ
アセスルファム−K 砂糖の200倍の甘さ
アスパルテーム 砂糖の200倍の甘さ
サッカリン 砂糖の300倍の甘さ
ネオヘスペリジン・ジヒドロカルコン 砂糖の300倍の甘さ
スクラロース 砂糖の600倍の甘さ
ネオテーム 砂糖の8,000倍の甘さ
以下の配合で、本開示に従った飲料を調製する。具体的には、天然甘味料を含有するダイエットコーラを3つの異なるTAレベル(12、10、および9)で調合した。一般的なレベルである12のTAでは、ダイエットコーラは酸っぱくて苦い。より低いTAレベル、特に9では、甘味が増大し酸味が低下した、適切な甘味/酸味比を有するダイエットコーラが得られた。苦味はより少なくなった。
Claims (28)
- 少なくとも1種類のステビオール配糖体、
エリスリトール、および
少なくとも1種類の酸
を含んでなる飲料製品であって、
8.75以上11以下の滴定酸度、および2.8以上3.3以下のpHを有する、
飲料製品。 - 約9〜約11の滴定酸度を有し、約2.8〜約3.1のpHを有することを特徴とする、請求項1に記載の飲料製品。
- 前記少なくとも1種類のステビオール配糖体が、ステビオサイド、ステビオールビオサイド、ズルコサイドA、レバウディオサイド、およびそれらの混合物からなる群より選択される、請求項2に記載の飲料製品。
- 前記少なくとも1種類のステビオール配糖体がステビオサイドであることを特徴とする、請求項2に記載の飲料製品。
- 前記少なくとも1種類の酸が、クエン酸、リン酸、およびリンゴ酸からなる群より選択される少なくとも1つであることを特徴とする、請求項2に記載の飲料製品。
- 前記少なくとも1種類の酸がリン酸およびクエン酸であることを特徴とする、請求項2に記載の飲料製品。
- 前記飲料が透明であることを特徴とする、請求項2に記載の飲料製品。
- D−タガトースをさらに含んでなることを特徴とする、請求項2に記載の飲料製品。
- 前記飲料が、炭酸清涼飲料、非炭酸清涼飲料、ファウンテン飲料、冷凍レディ・トゥ・ドリンク飲料、コーヒー飲料、茶飲料、乳飲料、フレーバーウォーター、機能性飲料、フルーツジュース、フルーツジュース風味飲料、スポーツドリンク、およびアルコール飲料からなる群より選択されることを特徴とする、請求項2に記載の飲料製品。
- 前記飲料が天然であることを特徴とする、請求項2に記載の飲料製品。
- 前記ステビオール配糖体がレバウディオサイドAであり、
8.75〜10.5の範囲の滴定酸度および2.8〜3.3の範囲内のpHを有することを特徴とする、請求項1に記載の飲料製品。 - ステビオサイド、ステビオールビオサイド、ズルコサイドA、レバウディオサイドB、レバウディオサイドC、レバウディオサイドD、レバウディオサイドE、およびそれらの混合物からなる群より選択される、少なくとも1種類のステビオール配糖体をさらに含んでなることを特徴とする、請求項11に記載の飲料製品。
- タガトースをさらに含んでなることを特徴とする、請求項11に記載の飲料製品。
- 前記エリスリトールが1.0重量%〜4.5重量%の範囲で存在することを特徴とする、請求項11に記載の飲料製品。
- 前記エリスリトールが2.5重量%〜3.5重量%の範囲内で存在することを特徴とする、請求項11に記載の飲料製品。
- 前記エリスリトールが2.8%〜3.5重量%の範囲内で存在することを特徴とする、請求項11に記載の飲料製品。
- 前記少なくとも1種類の酸が、クエン酸、リン酸、リンゴ酸、酒石酸、乳酸、フマル酸、アスコルビン酸、グルコン酸、コハク酸、マレイン酸、アジピン酸、ケイヒ酸、グルタル酸、およびそれらの任意の混合物からなる群より選択されることを特徴とする、請求項11に記載の飲料製品。
- 前記少なくとも1種類の酸がリン酸およびクエン酸の混合物であることを特徴とする、請求項17に記載の飲料製品。
- 前記少なくとも1種類の酸が0.01重量%〜1.0重量%の範囲で存在することを特徴とする、請求項11に記載の飲料製品。
- 前記少なくとも1種類の酸が0.05重量%〜約0.5重量%の範囲で存在することを特徴とする、請求項11に記載の飲料製品。
- 前記少なくとも1種類の酸が1重量%〜0.25重量%の範囲で存在することを特徴とする、請求項11に記載の飲料製品。
- 前記滴定酸度が9〜10の範囲であることを特徴とする、請求項11に記載の飲料製品。
- 前記滴定酸度が9であることを特徴とする、請求項11に記載の飲料製品。
- 前記pHが3.0〜3.2の範囲であることを特徴とする、請求項11に記載の飲料製品。
- 前記飲料製品が透明であることを特徴とする、請求項11に記載の飲料製品。
