Abstract

[Also in Division C6] A nutritionally enhanced sour milk product, for example the product of a lactic acid producing fermentation, contains the reaction product of a reducing sugar and an amino acid or peptide or salt thereof. The reaction product may be incorporated in the milk prior to fermentation, which may be effected by Lactobacillus bifidus (preferably subsp. penvylvanicus), bulgaricus, acidphilus or lactis.
