Abstract

Acid, protein-contg. drinks are prepd. by hydrolysing an aqs. dispersion of an edible protein by means of a proteolytic enzyme, so that the protein mainly becomes soluble, adjusting the pH of the mixture to 2.5-5.0, and formulating a drink from this soln. The drink has high nutritive value and acceptable taste.
