PROCEDIMIENTO PARA LA PREPARACION DE PASTA DE PIMIENTO PARA EL RELLENO DE ACEITUNAS DESHUESADAS, A PARTIR DE UNA MASA FLUIDA A BASE DE PIMIENTO NATURAL TRITURADO, AGUA, ALGINATO SODICO Y GOMA GUAR, ASI COMO UN BAÑO GELIFICANTE A BASE DE UNA SOLUCION ACUOSA DE CLORURO CALCICO. LA MASA FLUIDA SE DEJA CAER EN CAIDA LIBRE, SEGUN CANTIDADES DOSIFICADAS, AL INTERIOR DEL BAÑO GELIFICANTE, CON LOS QUE EL ALGINATO SODICO SE TRANSFORMA EN ALGINATO CALCICO QUE GELIFICA EN CONTACTO CON EL AGUA, ADQUIRIENDO LAS CANTIDADES DOSIFICADAS DE MASA UNA CONFIGURACION ESFERICA COMPACTA, ELASTICAMENTE DEFORMABLE.
