技术领域
本发明涉及减肥饮品技术领域,具体涉及一种具有减肥作用的饮品(左旋肉碱、绿茶和马黛茶)及制备方法。
背景技术
茶叶中所含的成份很多,将近500种。主要有咖啡碱、茶碱、可可碱、胆碱、黄嘌呤、黄酮类及甙类化合物、茶鞣质、儿茶素、萜烯类、酚类、醇类、醛类、酸类、酯类、芳香油化合物、碳水化合物、多种维生素、蛋白质和氨基酸。氨基酸有半胱氨酸、蛋氨酸、谷氨酸、精氨酸等。茶中还含有钙、磷、铁、氟、碘、锰、钼、锌、硒、铜、锗、镁等多种矿物质。茶叶中的这些成分,对人体是有益的,其中尤以锰能促进鲜茶中维生素C的形成,提高茶叶抗癌效果。
绿茶采取茶树的新叶或芽,未经发酵,经杀青、整形、烘干等工艺而制作的,保留了鲜叶的天然物质,含有的茶多酚、儿茶素、叶绿素、咖啡碱、氨基酸、维生素等营养成分。绿化色泽和茶汤较多保存了鲜茶叶的绿色格调,由此得名。
左旋肉碱是一种天然存在于人体体内的类氨基酸物质,有运输脂肪至线粒体并加速脂肪燃烧和分解的功能,从而让消费者达到减肥瘦身的效果。
马黛茶是由马黛树(学名巴拉圭冬青)的叶子制成,是一种源自南美的富含咖啡因的泡腾茶,初饮提神,而后有烟熏的香气。马黛茶含有的马黛因,有兴奋神经系统的功效,可以提神解乏,马黛茶可以提高人体的免疫能力功效,可以激发身体器官对各种疾病的天然抵抗力。马黛茶可以刺激胆汁和胃酸分泌增加,保持肠道清洁,有利于减少胃的细菌,可以帮助人体消化,预防口臭。马黛茶含有抗氧化剂,氨基酸,能阻止血液积聚在动脉壁上,可以预防动脉硬化和中风的发生。还有清除净化肠道及血液中的胆固醇的功效,有减肥降脂的作用。
近几年来,市面上出现了多款茶饮料包括:绿茶、红茶、乌龙茶、白茶、花茶、黑茶等,深受广大消费者的喜爱。目前的茶饮料多是由经特殊工艺制成的茶汁浓液或干茶粉与其他添加物配制而成,且大部分茶饮中添加了白砂糖等拥有较好的口感但也因此具有较高的能量;而市面上存在的纯茶饮料虽然属于零卡饮料,但由于其独特的风味而不被大部分消费者接受。因此开发一款健康的、口感丰富、富含儿茶素和左旋肉碱且具有功能性的茶饮蕴含着巨大的商机。
本专利使用的绿茶浓缩粉是浙江天草生物开发的一款复合G型儿茶素占比达到90%的专利绿茶浓缩粉,它能有效减少机体摄入脂肪,从而达到减少体重的效果。而左旋肉碱则能有效加速脂肪燃烧和分解,从而也能让消费者达到减肥瘦身的效果。马黛茶则具有清除净化肠道及血液中的胆固醇的功效从而达到减肥降脂的作用。
已有报道,在研究运动、EGCG儿茶素和左旋肉碱对肥胖大鼠脂肪代谢和能量代谢的作用,发现三者的联合对于肥胖小鼠的效果优于三者独立使用效果;但未有研究左旋肉碱、绿茶和马黛茶三者联合作用的研究;基于此,本发明提供一种具有减肥作用的饮品及制备方法。

针对现有技术的缺陷,本发明的目的是提供一种具有减肥作用的饮品及制备方法。

(1)水处理:饮品用水先经过澄清、过滤、软化、灭菌处理过程,备用;
(2)取混合粉末溶于(1)中备用水中,加入互溶助剂,不间断搅拌,得到原料液;
(3)将(2)中的原料液循环加热,加入赤藓糖醇、左旋肉碱和葡萄糖基甜菊糖苷的预混料,搅拌;
(4)随后再加入食用香精,搅拌均匀,得到茶液;
(5)通过柠檬酸调配使得(4)中的茶液PH为5.8-6.2;
(6)随后进行过滤,再进行高温瞬时杀菌;
(7)冷却后热罐装至瓶中。

与现有技术相比,本发明具有如下的有益效果:
(1)本专利采用绿茶浓缩粉、左旋肉碱和马黛茶粉末为主要原料制作成一款茶饮料,以满足消费在享受饮料的同时还具有减肥瘦身的效果;本专利是一款健康的、具有减肥效果的茶类饮品,首次将G型儿茶素、左旋肉碱及马黛茶相结合应用于茶饮中,在享受茶饮料的同时还具有减肥瘦身的功效;
(2)互溶助剂加入,可将G型儿茶素、左旋肉碱及马黛茶相互对接互溶,从而增强组合效果,提高减肥瘦身的功效,海藻酸钠能够将改性蒙脱土助剂进行润透,从而促进改性蒙脱土助剂在产品中的分散能力,而改性蒙脱土助剂采用蒙脱土煅烧、超声分散改性处理,改进蒙脱土本身具有聚集的缺陷,利用蒙脱土的吸附效果,从而将G型儿茶素、左旋肉碱及马黛茶更好的对接互溶,提高原料之间的反应程度,此外,加入的蒙脱土本身符合安全理念,可应用在饮品产品上。

饮品还包括互溶助剂,所述互溶助剂的制备方法为:将10-20份海藻酸钠加入到40-50份去离子水中,先以100-200r/min的转速搅拌10-20min,然后再加入1-5份改性蒙脱土助剂,送入到磁力搅拌器内进行搅拌处理,搅拌处理20-30min,搅拌转速为50-100r/min,搅拌得到,互溶助剂;
改性蒙脱土助剂的改性方法为:将蒙脱土送入到煅烧炉中进行煅烧,煅烧温度为300-500℃,煅烧时间为10-20min,煅烧结束,然后冷却至100-200℃,保温,送入到去离子水中进行超声分散,超声功率为100-500W,超声结束,水洗、干燥,得到改性蒙脱土助剂。

对上述实施例和对比例制备的茶饮料进行口感测试:选择20人参加,年龄在20-45岁之间;口感测试分为5个问题,分别为:整体喜好、整体甜味喜好、入口甜味喜好、回味甜味喜好、酸甜比喜好;每个测试人员在喜欢的样品及问题下面打勾;汇总上述单个问题的喜欢的人数,将所有人数作为总分如表1所示:

通过口感测评,本款茶饮料入口茶香浓厚,甘甜可口,口味清新,通过上表数据可以看出实施例5的甜味最接近对比例1白砂糖的甜味。
有研究表明:在研究EGCG和左旋肉碱以及联合运动对于小鼠减肥效果中发现,EGCG和左旋肉碱结合使用的效果比单独使用的减轻体重效果更好。为了验证左旋肉碱,EGC G儿茶素和马黛茶联合使用对于人体体重管理的影响,设计了以下实验:召集100名肥胖人员服用本茶饮产品,并进行体重持续跟踪6个月。受试者分为5组,每组二十人,分别饮用实施例5、对比例2、对比例3、对比例4、对比例5、对比例6和空白样(矿泉水),每日2瓶(每瓶420ml),饮用时间为中午12点和晚上6点。受试者每日正常饮食和活动,且每天早上起床后立即测量记录体重,每隔一个月做一次统计并计算平均每月的体重减少率。
最终所有组分的体重减少率统计数据如表2所示:

通过受试者平均体重减少率统计数数据可以发现:除了空白对照组体重变化不大,其余试验组的体重都有较明显的减轻,其中服用实施例5的受试者,通过半年的定期饮用产品,平均体重减少率达到了16.1%且大于所有对比例受试者的体重减少率,由此可见左旋肉碱和富含G型儿茶素的绿茶浓缩粉搭配能够使得减肥效果更加显著。

左旋肉碱、绿茶浓缩粉(G型儿茶素占比90%)和马黛茶粉末混合物料0.3-0.5%、赤藓糖醇1-1.5%、葡萄糖基甜菊糖苷0.012=0.018%、食用香精0.008-0.012%、柠檬酸0.03-0.05%、水适量;总量100%,其中左旋肉碱、绿茶浓缩粉(G型儿茶素占比90%)和马黛茶粉末的比例为10:1:9。
2.根据权利要求1所述的一种具有减肥作用的饮品,其特征在于,所述饮品包含以下重量百分比的原料:
左旋肉碱、绿茶浓缩粉(G型儿茶素占比90%)和马黛茶粉末混合物料0.4%、赤藓糖醇1.5%、葡萄糖基甜菊糖苷0.015%、食用香精0.01%、柠檬酸0.05%、水适量;总量100%。
3.根据权利要求1所述的一种具有减肥作用的饮品,其特征在于,所述饮品还包括互溶助剂,所述互溶助剂的制备方法为:将10-20份海藻酸钠加入到40-50份去离子水中,先以100-200r/min的转速搅拌10-20min,然后再加入1-5份改性蒙脱土助剂,送入到磁力搅拌器内进行搅拌处理,搅拌处理20-30min,搅拌转速为50-100r/min,搅拌得到,互溶助剂;
所述改性蒙脱土助剂的改性方法为:将蒙脱土送入到煅烧炉中进行煅烧,煅烧温度为300-500℃,煅烧时间为10-20min,煅烧结束,然后冷却至100-200℃,保温,送入到去离子水中进行超声分散,超声功率为100-500W,超声结束,水洗、干燥,得到改性蒙脱土助剂。
4.一种如权利要求1-3任一项所述减肥作用的饮品的制备方法,其特征在于,包括以下步骤:
(1)水处理:饮品用水先经过澄清、过滤、软化、灭菌处理过程,备用;
(2)取混合粉末粉末溶于(1)中备用水中,加入互溶助剂,不间断搅拌,得到原料液;
(3)将(2)中的原料液循环加热,加入赤藓糖醇和葡萄糖基甜菊糖苷的预混料,搅拌;
(4)随后再加入食用香精,搅拌均匀,得到茶液;
(5)通过柠檬酸调配使得(4)中的茶液PH为5.8-6.2;
(6)随后进行过滤,再进行高温瞬时杀菌;
(7)冷却后热罐装至瓶中。
5.根据权利要求4所述的一种减肥作用的饮品的制备方法,其特征在于,所述步骤(2)和步骤(3)中加热温度为40-45℃,保温时间为20min。
6.根据权利要求4所述的一种减肥作用的饮品的制备方法,其特征在于,所述步骤(4)中的搅拌时间为5min,搅拌转速为100r/min。
7.根据权利要求4所述的一种减肥作用的饮品的制备方法,其特征在于,所述步骤(6)中杀菌温度为118℃,杀菌时间为5s。
8.根据权利要求4所述的一种减肥作用的饮品的制备方法,其特征在于,所述步骤(7)中冷却至温度为30-40℃。
