技术领域
本发明涉及一种低卡路里饮料组合物。更详细而言,本发明涉及一种通过配合为高甜度甜味剂的三氯蔗糖和罗汉果提取物而消除了由无机电解质产生的苦味或涩味等令人不悦的味道、并具有令人舒畅的甜味的低卡路里饮料组合物。
背景技术
作为用于补给由运动等发汗而失去的水分及电解质的饮料组合物,已知有低卡路里运动饮料。为了补给由发汗失去的Na+、K+、Mg2+、Ca2+等阳离子及Cl-或磷酸离子等阴离子,所述低卡路里饮料组合物含有无机电解质或有机酸。但是,在饮料中配合用于补给失去的阳离子及/或阴离子所必需的量的无机电解质时,存在产生苦味、成味、涩味等令人不悦的味道和饮用后的后味不良的问题。
一直以来,人们通过添加各种甜味剂来缓和上述含有无机电解质的饮料的令人不悦的味道。作为所述甜味剂,从美味的观点考虑最优选蔗糖,但其添加量大时,存在卡路里增大的问题。因此,也正在研究使用三氯蔗糖、阿斯巴甜、安赛蜜等高甜度甜味剂代替蔗糖。但是,上述甜味剂与蔗糖相比,甜味的质量差。另外,例如阿斯巴甜在酸性饮料中是不稳定的,还存在3个月左右甜味下降的问题。由于上述原因,即使使用高甜度甜味剂也依然未开发出充分消除由无机电解质产生的令人不悦的味道的饮料组合物。
作为来自天然的高甜度甜味剂之一,已知有罗汉果提取物。罗汉果学名为“光果木鳖(Grosvenori Swingle)”,是在中国的广西省桂林地区周边生长的葫芦科的多年生植物的果实。罗汉果提取物的甜味成分为被称作“罗汉果苷”的苷,与蔗糖相比具有约300倍以上的甜味。有报道指出罗汉果提取物除了具有高甜度之外还具有抗氧化作用、抗动脉硬化作用、抑制癌症发生作用、抗过敏作用及抗糖尿病作用(非专利文献1)。近年,已经公开了配合该罗汉果提取物的饮料(专利文献1-3)。
但是,到目前为止尚未开发出通过配合高甜度甜味剂来充分消除无机电解质的苦味、成味、涩味等令人不悦的味道的低卡路里饮料组合物。

发明内容
本发明的目的在于提供一种低卡路里饮料组合物,所述低卡路里饮料组合物消除了含有无机电解质的饮料所具有的苦味、成味及涩味、并且具有令人舒畅的甜味。
鉴于上述现状,本发明人等经过潜心研究,结果惊讶地发现通过在含有具有苦味、成味及涩味等令人不悦的味道的无机电解质及有机酸的饮料中配合罗汉果提取物及三氯蔗糖,可以显著地改善由无机电解质产生的令人不悦的味道。进而,本发明人等发现,通过将无机电解质及有机酸与罗汉果提取物组合,能够提供一种不破坏由罗汉果提取物产生的抗氧化作用、抗动脉硬化作用、抑制癌症发生作用、抗过敏作用及抗糖尿病作用、且将卡路里抑制在低水平的饮料。进而还发现含有上述成分的组合的饮料经时稳定且能经得起长时间保存。本发明是基于上述发现而完成的。
即,本发明提供以下的低卡路里饮料组合物。
项1.一种低卡路里饮料组合物,含有无机电解质、有机酸、罗汉果提取物及三氯蔗糖。
项2.如项1所述的低卡路里饮料组合物,其中,无机电解质为碱金属盐及/或碱土金属盐。
项3.如项1所述的低卡路里饮料组合物,其中,无机电解质为能够供给钠离子、钾离子、镁离子、钙离子及氯化物离子的电解质。
项4.如项1所述的低卡路里饮料组合物,其中含有无机电解质,无机电解质的含量是使每1000ml饮料组合物中的无机阳离子和无机阴离子的总量为30~80mEq的量。
项5.如项1所述的低卡路里饮料组合物,其中,有机酸为选自由柠檬酸、乳酸、L-谷氨酸、琥珀酸、天冬氨酸、藻酸、苹果酸、葡糖酸及富马酸组成的组中的1种以上。
项6.如项1所述的低卡路里饮料组合物,其中含有有机酸,有机酸的含有比例为,每1000ml饮料组合物中含有1000~2000mg的有机酸。
项7.如项1所述的低卡路里饮料组合物,其中含有罗汉果提取物,罗汉果提取物的含有比例为,每1000ml饮料组合物中含有以干燥重量计的5~30mg的罗汉果提取物。
项8.如项1所述的低卡路里饮料组合物,其中含有三氯蔗糖,三氯蔗糖的含有比例为,每1000ml饮料组合物中含有以干燥重量计的16~26mg的三氯蔗糖。
项9.如项1所述的低卡路里饮料组合物,其中含有罗汉果提取物,罗汉果提取物的含有比例为,相对于100重量份三氯蔗糖,罗汉果提取物换算成干燥重量计为50~80重量份。

换算成干燥重量为6~16mg/l的罗汉果提取物,
18~24mg/l的三氯蔗糖。
项12.一种低卡路里饮料组合物的制备方法,其特征在于,在水中配合无机电解质、有机酸、罗汉果提取物及三氯蔗糖。
根据本发明可以提供一种低卡路里饮料组合物,该组合物不破坏罗汉果提取物具有的抗氧化作用、抗动脉硬化作用、抑制癌症发生作用、抗过敏作用及抗糖尿病作用、且消除了无机电解质具有的涩味、成味、苦味等令人不悦的味道、并且具有令人舒畅的爽口的甜味。
另外,本发明的饮料即使经长时间保存也能使罗汉果提取物保持稳定,结果能够保持良好的味道和自身风味,因此在流通和保存阶段不会导致味道的恶化,从实用性的观点考虑也优异。
具体实施方式
本发明的低卡路里饮料组合物中配合的无机电解质为用于补给因发汗所失去的无机电解质阳离子及阴离子的成分。作为无机电解质阳离子,例如可以举出Na+、K+、Mg2+、Ca2+,作为无机电解质阴离子,例如可以举出Cl-和磷酸离子。因此,作为无机电解质,只要是能够使上述的无机电解质阳离子及/或无机电解质阴离子以游离的状态存在于水溶液中、且在食品卫生上不存在问题的物质即可,可以没有特殊限制地使用。
作为具体的无机电解质,例如可以举出钠及钾等碱金属的无机盐、以及镁及钙等碱土金属的无机盐。作为无机盐,例如可以举出氯化物盐和磷酸盐。作为更具体的无机电解质,例如可以举出NaCl、KCl、MgCl2、MgCO3、CaCl2、CaSO4、Na2SO4、K3PO4、Ca3[PO4]2、K2HPO4、KH2PO4、CaHPO4等。
上述无机电解质可以单独使用,也可以组合数种使用。优选组合2种以上的无机电解质进行使用,以使其能够向饮料中供给碱金属阳离子和碱土金属阳离子两者。考虑到离子的组合,优选以适当的盐的形式配合无机电解质,以使在补给无机电解质阳离子的同时也能够补给作为无机电解质阴离子的氯离子、磷酸离子等。例如,优选对本发明中使用的无机电解质进行设定使其能够供给钠离子和钾离子和镁离子和氯化物离子的组合、或钠盐和钾离子和钙离子和氯化物离子的组合、优选能够供给钠离子和钾离子和镁离子和钙离子和氯化物离子的组合。
作为在本发明的饮料组合物中配合的有机酸,只要为在饮料的用途中通常使用的有机酸即可,可以没有特别限制地使用。具体而言,可以举出柠檬酸、乳酸、L-谷氨酸、琥珀酸、天冬氨酸、藻酸、苹果酸、葡糖酸、富马酸等。其中,由于柠檬酸及葡糖酸能够进一步改善卡路里饮料组合物的味道,所以在本发明中优选使用。有机酸可以以游离酸的形式使用,也可以以与上述碱金属或碱土金属的盐的形式使用。通过以有机酸与碱金属的盐的形式配合在饮料中,能够同时将有机酸和无机电解质阳离子供给至饮料。作为上述有机酸盐,例如可以举出柠檬酸钠、柠檬酸钙、乳酸钠、乳酸钙、琥珀酸钠、琥珀酸二钠、L-谷氨酸钠、天冬氨酸钠、苹果酸钠、葡糖酸钙等。
本发明的饮料组合物,可以根据含有的电解质离子及有机酸的浓度及种类,适当选择配合的电解质及有机酸的量及种类。
本发明的饮料组合物中配合的罗汉果提取物是一种公知的甜味剂,是从葫芦科的多年生植物的果实中提取的。罗汉果提取物可以从市场上通过商业渠道获得,可以没有特殊限制地使用它们。另外,罗汉果提取物也可以按照常规方法从罗汉果的果实中获得。例如,罗汉果提取物可以使用水或乙醇等溶剂从罗汉果的果实中提取而获得。提取时也可以根据需要预先组合进行罗汉果果实的清洗、破碎、粉碎、切细、脱脂、发酵等。另外提取后也可以进行过滤、浓缩、干燥等处理,得到粉末状的罗汉果提取物。
罗汉果提取物中通常含有罗汉果苷Ⅴ、罗汉果苷Ⅳ、11-氧化罗汉果苷Ⅴ及赛门苷Ⅰ等为甜味成分的苷。
本发明的饮料组合物中配合的三氯蔗糖是甜味为砂糖的约600倍的甜味剂(4,1’,6’-三氯-4,1’,6’-三脱氧半乳型蔗糖)。三氯蔗糖可以商业渠道获得,可以将它们配合到本发明的饮料组合物中。
无机电解质可以以用于补给因发汗失去的无机电解质阳离子及阴离子的所必需的量适当地配合在饮料组合物中。配合无机电解质,无机电解质的含量是使每1000ml饮料组合物中的无机阳离子和无机阴离子的总量优选为10~80mEq左右、较优选为40~60mEq左右的量。更具体而言,配合无机电解质,使每1000ml饮料组合物中的无机阳离子优选为10~40mE左右、更优选为20~30mEq左右;使每1000ml饮料组合物中无机阴离子优选为10~40mEq左右、更优选为20~30mEq左右。
考虑到与甜味的平衡,以用于使后味良好的适当的量配合有机酸。在实施方案之一中,有机酸成分的配合比例为,每1000ml饮料组合物中含有以干燥重量计优选为1000~2000mg、更优选为1200~1800mg的有机酸成分。
罗汉果提取物的配合量,没有特殊限制,只要能降低由无机电解质产生的苦味、涩味、成味及令人不悦的后味即可,可以根据饮料所要求的甜味适当确定。每1000ml饮料组合物中配合以干燥重量计优选为5~30mg、更优选为6~25mg的罗汉果提取物。
三氯蔗糖可以考虑饮料的甜味及罗汉果提取物的配合量适当确定。每1000ml饮料组合物中配合优选为16~26mg、更优选为18~22mg的三氯蔗糖。
另外,对于罗汉果提取物和三氯蔗糖的比率,没有特殊限制,但为了提供具有更易饮用的甜味、且具有更好的味道的低卡路里饮料组合物,期望每100重量份三氯蔗糖中罗汉果提取物(换算为干燥重量)为50~80重量份,优选为60~75重量份
只要以满足上述配合比例的范围配合无机电解质、有机酸、罗汉果提取物及三氯蔗糖,则可以制备低卡路里且具有令人舒畅的甜味的饮料组合物,在实施方案之一中,通过满足以下的组成,能够得到具有更易饮用的甜味的低卡路里饮料组合物。上述组成具体而言可以举出:无机电解质(阴离子和阳离子的总量)为55~59mEq/l,有机酸为1000~2000mg/l,罗汉果提取物(换算为干燥重量)为6~16mg/l,及三氯蔗糖为18~24mg/l;
优选可以举出:无机电解质阳离子为26~30mEq/l,无机电解质阴离子为26~30mEq/l,罗汉果提取物(换算为干燥重量)为10~14mg/l,三氯蔗糖为18~24mg/l;
更优选可以举出:钠离子为21~23mEq/l,钾离子为4.5~6mEq/l,镁离子为0.5~1mEq/l,钙离子为1~2mEq/l,氯化物离子为16.5~22mEq/l,罗汉果提取物(换算为干燥重量)为6~16mg/l,三氯蔗糖为18~24mg/l。
本发明的饮料组合物通过配合上述罗汉果提取物,可以减少蔗糖等糖分的使用量,由此可以大幅降低该饮料组合物中所含的卡路里。本发明的饮料组合物每100ml优选为11kcal以下,更优选为10kcal以下。
本发明的饮料组合物,只要能够维持低的卡路里、且能够维持通过无机电解质、有机酸、罗汉果提取物及三氯蔗糖的组合被缓和的涩味和苦味等,则除了上述各成分之外,还可以在饮料组合物中添加通常添加的各种成分,没有特别的限制。作为其他成分,例如可以举出果汁(葡萄柚、苹果、橘子、柠檬、菠萝、香蕉、梨等的果汁);维生素类(例如维生素A、维生素B2、维生素B6、泛酸、烟酸、维生素C等);香料(香草醛、沉香醇、天然香料等);稳定剂;各种氨基酸;食物纤维(瓜耳胶、聚葡萄糖、难消化糊精、果胶、纤维素等);糖类(葡萄糖、果糖等单糖类,蔗糖(包括白糖)、麦芽糖、乳糖等二糖类,低聚果糖、大豆低聚糖、低聚半乳糖等低聚糖类等);糖醇(赤藓醇、木糖醇、山梨糖醇、甘露糖醇等)。
本发明的低卡路里饮料组合物可以通过在适合饮料用的水中添加上述的无机电解质、有机酸、罗汉果提取物及三氯蔗糖、以及根据需要的其他甜味剂或维生素类等,进行混合而制备。混合各成分后,根据需要,可以将本发明的饮料组合物进行脱气、灭菌、冷却、填充到容器中。
由于本发明的低卡路里饮料组合物具有令人舒畅的甜味、爽口、且能够供给因发汗失去的各种无机电解质,所以适合作为沐浴后或运动后饮用的清凉饮料或运动饮料。另外,本发明的低卡路里饮料组合物能够提供碳酸饮料的畅快的咽下感,所以也可以作为碳酸饮料。另外,由于本发明的饮料组合物不破坏抗氧化作用、抗动脉硬化作用、抑制癌症发生作用、抗过敏作用及抗糖尿病作用,所以除了作为一般食品之外,作为患者用、功能性或特定保健用食品也是有用的。
[实施例]
以下,基于实施例更详细地说明本发明,但本发明并不限定于此。需要说明的是,在以下给出的实施例中,使用的罗汉果提取物的销售商为DAMIN跨国集团长兴实业株式会社,生产商为DAMIN公司(中国,Amoy),产品编号为FD罗汉果浓缩粉末JFL-038。
实施例:感官评价
在1000ml水中配合以下表1中记载的各成分,制备饮料。

将实施例1~3及比较例1中制成的饮料给10名参加者试喝,按照以下表2所示的评价基准对苦味、涩味、成味、后味进行评价,得到作为饮料的有关爽口和美味的综合评价。评价结果示于表3。

由表3中所示的结果可知,相当于本发明的低卡路里组合物的实施例1~3的饮料,通过含有无机电解质和罗汉果提取物及三氯蔗糖,而显著地改善了无机电解质固有的苦味、涩味、成味等令人不悦的味道。该结果表明,通过组合无机电解质、有机酸、罗汉果提取物及三氯蔗糖得到的本发明的饮料组合物是具有令人舒畅的甜味且具有到目前为止所没有的味道的饮料组合物。
实施例:稳定性评价
在1000ml水中配合以下表4中记载的各成分,制备饮料(实施例4)。将制备的饮料分别保存在50℃遮光条件、37℃遮光条件、25℃遮光条件、室温遮光条件、4℃遮光条件及室温日光照射条件下,测定保存前后的罗汉果提取物的残存率(以保存前的罗汉果提取物的量为100%进行计算)。

所得的结果示于表5。由该结果可以确认,本发明的饮料组合物能使罗汉果提取物长时间保持稳定,并且具有稳定性,将饮料供应到市场上时能够经得起运输和保存。

Claims (12)
1.一种低卡路里饮料组合物,含有无机电解质、有机酸、罗汉果提取物及三氯蔗糖。
2.如权利要求1所述的低卡路里饮料组合物,其中,无机电解质为碱金属盐及/或碱土金属盐。
3.如权利要求1所述的低卡路里饮料组合物,其中,无机电解质为能够供给钠离子、钾离子、镁离子、钙离子及氯化物离子的电解质。
4.如权利要求1所述的低卡路里饮料组合物,其中含有无机电解质,无机电解质的含量是使每1000ml饮料组合物中的无机阳离子和无机阴离子的总量为30~80mEq的量。
5.如权利要求1所述的低卡路里饮料组合物,其中,有机酸为选自由柠檬酸、乳酸、L-谷氨酸、琥珀酸、天冬氨酸、藻酸、苹果酸、葡糖酸及富马酸组成的组中的1种以上。
6.如权利要求1所述的低卡路里饮料组合物,其中含有有机酸,有机酸的含有比例为,每1000ml饮料组合物中含有1000~2000mg的有机酸。
7.如权利要求1所述的低卡路里饮料组合物,其中含有罗汉果提取物,罗汉果提取物的含有比例为,每1000ml饮料组合物中含有以干燥重量计的5~30mg的罗汉果提取物。
8.如权利要求1所述的低卡路里饮料组合物,其中含有三氯蔗糖,三氯蔗糖的含有比例为,每1000ml饮料组合物中含有以干燥重量计的16~26mg的三氯蔗糖。
9.如权利要求1所述的低卡路里饮料组合物,其中含有罗汉果提取物,罗汉果提取物的含有比例为,相对于100重量份三氯蔗糖,罗汉果提取物换算成干燥重量计为50~80重量份。
10.如权利要求1所述的低卡路里饮料组合物,其中按下述比例含有:
总量为55~59mEq/l的阴离子无机电解质和阳离子无机电解质,
1000~2000mg/l的有机酸,
换算成干燥重量为8~16mg/l的罗汉果提取物,
以及18~24mg/l的三氯蔗糖。
11.如权利要求1所述的低卡路里饮料组合物,其中按下述比例含有:
21~23mEq/l的钠离子,
4.5~6mEq/l的钾离子,
0.5~1mEq/l的镁离子,
1~2mEq/l的钙离子,
16.5~22mEq/l的氯化物离子,
换算成干燥重量为6~16mg/l的罗汉果提取物,
18~24mg/l的三氯蔗糖。
12.一种低卡路里饮料组合物的制备方法,其特征在于,在水中配合无机电解质、有机酸、罗汉果提取物及三氯蔗糖。
