在此公开的饮料产品包括饮料(即,即饮液体配方),饮料浓缩物等。向最初体积的汁液或汁液浓缩物中加入其他成分来制备所考虑的饮料浓缩物的至少某些示例性实施方案。可以通过将更多体积的水加入到该浓缩物中而从饮料浓缩物形成原味(full strength)饮料组合物。在某些其他实施方案中,不需要形成浓缩物和随后的稀释而直接制备原味饮料。
在某些示例性实施方案中,饮料产品含有汁液和添加的水。纯水或过滤水可以用于在此公开的饮料的某些实施方案的制造中,并且可以使用标准饮料质量的水,使得不会不利地影响饮料口味、气味或外观。基于生产饮料时适用的工业和政府标准,水通常是清澈的、无色的、无可观察到的矿物质、味道和气味、无有机物质、弱碱性并具有可接受的微生物学质量。在某些示例性实施方案中,加入的水占饮料产品约0%至约90%重量,例如,约15%至约80%重量,约40%至约70%重量,或约50%至约60%重量。

如以上所提及的,在此公开的饮料产品的至少某些示例性实施方案使用甜菊糖苷、新蛇菊苷和相关的化合物,用于加甜。例如,可以通过从甜菊植物中提取等来获得这些甜味剂。甜菊(例如,甜菊Bertoni)是一种甜味植物。其叶子含有天然甜味双萜糖苷的复合混合物。甜菊糖苷,尤其是新蛇菊苷,是甜菊产生甜味的成分。通常,发现这些化合物包括甜菊苷(4-13%干重)、甜菊双苷(微量)、新蛇菊苷(包括新蛇菊苷A(2-4%)、新蛇菊苷B(微量)、新蛇菊苷C(1-2%)、新蛇菊苷D(微量)和新蛇菊苷E(微量))和杜尔可苷A(0.4-0.7%)。在甜菊植物的叶子中还鉴定出以下的非甜味成分:labdane、二萜、三萜、甾醇、类黄酮、挥发性油成分、色素、胶体和无机物质。将新蛇菊苷A加入根据本发明的汁液饮料中时,没有获得在人造甜味剂情况下典型的金属后味。在某些示例性实施方案中,将约0.005%重量至约0.10%重量,例如,约0.01%至约0.05%的新蛇菊苷A包括在饮料产品中。

本发明的饮料产品的某些示例性实施方案包括均质的果肉。令人惊讶地,发现了当与天然非营养性甜味剂结合使用时,均质的果肉积极地影响本发明的减热、清淡或低热汁液饮料实施方案的甜味和口感。有利地,均质的果肉通过提供提高的粘度增强了饮料产品的口感。此外,均质的果肉给饮料产品提供了增加的水果风味(例如,来自橙肉的橙味)和增加的甜味。在某些示例性实施方案中,均质的果肉含有柑桔类果肉,例如其中为橙肉、葡萄柚肉、柠檬肉、酸橙肉,及其任意的混合物。如在此所用的,将柑桔类果肉限定为柑桔汁榨取处理后收集的破碎汁囊和碎壁。如在此所用的,将均质的果肉限定为没有从悬浮液中分离出来的悬浮于水溶液中的果肉颗粒。可以通过各种均质技术,使用如搅拌机或胶体磨这样的设备,来生产均质的果肉。在某些示例性实施方案中,均质的果肉具有约60至约200微米,约70至约100微米或约150至约250微米的平均粒径;其中至少80%的均质果肉颗粒为50至540微米。在某些示例性实施方案中,饮料产品包括用量为饮料的约5%至约20%重量,例如,约10%至约15%重量的均质果肉。
