本发明涉及食品加工技术领域,尤其涉及一种红枣养血低糖胡萝卜果酱及其制备方法。
背景技术
目前,我国生产的果酱多为高糖制品,含糖量一般都达60%~65%,使果酱口感过于甜腻,而且也不利于人体健康,不符合现代食品健康化的要求。鉴于市场上低糖果酱品种较少和消费者对高糖果酱需求量减少的现状,低糖果酱产品有着很大的潜在市场。现在市场上销售的果酱产品主要是草莓、苹果、山楂、杏,其它品种较少见到。
胡萝卜营养丰富,含有胡萝卜素、多种氨基酸、膳食纤维,以及锌、钙、磷、铁等矿物质,不仅易于被人体消化吸收,而且具有健脾、化滞、解毒、防治夜盲症、保护视力、促进儿童生长发育、降血压和抗癌等多种保健功能。此外它还有广泛的药用价值,特别是β-胡萝卜素可在人体肝脏内经胡萝卜素酶的作用转化为维生素A。维生素A可使多种组织的上皮组织细胞维持正常的分化和增殖机能,调节新陈代谢,增强对传染病的抵抗,因此享有“小人参”之美誉,是一种天然保健食品。甘薯营养丰富,富含纤维,具有易于消化吸收、预防便秘和肠道疾病、防止血液中胆固醇的形成等功效,是集药、食、补三大功能为一体的保健食品。
含糖量 30%~35%的低糖果酱的优点是突出了原果风味和轻爽的口感,扩大了消费范围,成为营养丰富、老少皆宜的佐餐佳品和旅游方便食品,具良好的发展趋势。但是,生产低糖果酱主要具有两个难点:一是,产生褐变,直接影响了果酱产品的外观,降低了产品性能;二是,伴随着含糖量的降低,果酱凝胶的持水力下降,酱体易析出水分,严重影响商品外观。

本发明目的就是为了弥补已有技术的缺陷,提供一种红枣养血低糖胡萝卜果酱及其制备方法。
本发明是通过以下技术方案实现的:
一种红枣养血低糖胡萝卜果酱,由以下重量份原料制成:
新鲜胡萝卜100-120、新鲜甘薯100-120、鲜牛奶18-20、银耳8-10、红枣7-8、枇杷6-7、莲子心3-4、桃叶0.7-0.9、白芍0.9-1.1、茶多酚0.08-0.10、白砂糖50-60、柠檬酸0.6-1、氯化钙1-1.2、水适量。
所述的一种红枣养血低糖胡萝卜果酱的制备方法,包括以下步骤:
(1)将新鲜胡萝卜用流水充分清洗,配制浓度为4%的NaOH溶液并煮沸,再投入清洗好的胡萝卜,4-6min后捞出用冷水漂洗去皮;将去好皮的胡萝卜切成厚度为0.5cm左右的薄片,并将切片后的胡萝卜置于沸水中煮4-5min;将经预煮软化处理过的胡萝卜,趁热用组织捣碎机打浆1-2次,得胡萝卜酱;
(2)将新鲜甘薯用流水充分清洗后人工去皮,将去皮后的甘薯切成厚度为0.5cm左右的薄片,用沸水热烫2-3min;将预煮处理过的甘薯趁热打浆1-2次,得甘薯酱;
(3)将莲子心、桃叶、白芍用5-8倍量的水加热提取,过滤,得中药提取液备用;
(4)将银耳、红枣、枇杷粉碎切碎后置于锅中,加5-6倍水,文火煮至粘稠停火,过滤,得滤液备用;
(5)将茶多酚、白砂糖加水煮沸溶解后,配成60%-65%的浓糖液过滤备用;
(6)将步骤(1)-(5)处理后的物料与剩余各原料混合入锅,边加热熬制边搅拌,直至酱体透明、可溶性固形物达35%-40%为止;趁热罐装、杀菌,即得。
本发明的优点是:本发明对新鲜胡萝卜、新鲜甘薯分别进行预处理,其中对胡萝卜进行预煮,除了可以软化原料组织并间接排气,还可以除去胡萝卜的异味;本发明添加了茶多酚,茶多酚具有很强的抗氧化作用,其抗氧化能力是人工合成抗氧化剂BHT、BHA的4-6倍,是VE的6-7倍,VC的5-10倍,而无合成物的潜在毒副作用,所含的儿茶素对胡萝卜、甘薯中的色素和维生素类有保护作用,使制得的果酱在较长时间内保持原有色泽与营养水平,并能消除异味;本发明添加了鲜牛奶、氯化钙,鲜牛奶可增加果酱的爽滑口感和黏性,氯化钙为难溶性钙盐,在酸性环境下可逐渐释放钙离子,可控制凝胶的速度,达到均匀凝胶的目的,并且甘薯的淀粉含量高,使得制得的果酱不易析出水分,且涂抹性好;本发明为具有保健功能的低糖复合果酱,含糖量为30%~35%,不仅原果风味突出,而且符合低糖、低热健康食品的发展趋势,其营养更丰富,更能满足广大消费者的需求;此外,本发明采用的红枣等辅料具有补中益气、养血安神、健脾益胃的功能,配以白芍等中草药成分具有养血柔肝、缓中止痛的功效。

新鲜胡萝卜100-120、新鲜甘薯100-120、鲜牛奶18-20、银耳8-10、红枣7-8、枇杷6-7、莲子心3-4、桃叶0.7-0.9、白芍0.9-1.1、茶多酚0.08-0.10、白砂糖50-60、柠檬酸0.6-1、氯化钙1-1.2、水适量。
2.如权利要求1所述的一种红枣养血低糖胡萝卜果酱的制备方法,其特征在于,包括以下步骤:
(1)将新鲜胡萝卜用流水充分清洗,配制浓度为4%的NaOH溶液并煮沸,再投入清洗好的胡萝卜,4-6min后捞出用冷水漂洗去皮;将去好皮的胡萝卜切成厚度为0.5cm左右的薄片,并将切片后的胡萝卜置于沸水中煮4-5min;将经预煮软化处理过的胡萝卜,趁热用组织捣碎机打浆1-2次,得胡萝卜酱;
(2)将新鲜甘薯用流水充分清洗后人工去皮,将去皮后的甘薯切成厚度为0.5cm左右的薄片,用沸水热烫2-3min;将预煮处理过的甘薯趁热打浆1-2次,得甘薯酱;
(3)将莲子心、桃叶、白芍用5-8倍量的水加热提取,过滤,得中药提取液备用;
(4)将银耳、红枣、枇杷粉碎切碎后置于锅中,加5-6倍水,文火煮至粘稠停火,过滤,得滤液备用;
(5)将茶多酚、白砂糖加水煮沸溶解后,配成60%-65%的浓糖液过滤备用;
(6)将步骤(1)-(5)处理后的物料与剩余各原料混合入锅,边加热熬制边搅拌,直至酱体透明、可溶性固形物达35%-40%为止;趁热罐装、杀菌,即得。
