所述的糙米粉,粉碎粒径为26~28μm。
所述的石斛,种植过程经营养强化,富含矿质元素硒和锌,其中硒含量为11~13μg/g,锌含量为17~19mg/g。
所述的啤酒酵母,已经进行活化,可直接加入,进行发酵。

一种富含小麦低聚肽的石斛营养面条的制备方法,具体的包括以下步骤:
(1)将麦芽粉和糙米粉混合均匀,加入麦芽粉重量3倍量的纯净水,搅拌均匀,加入低聚半乳糖,搅拌至完全溶化后,置于121℃灭菌15~20分钟,置于冷却间,流水冷却至10~15℃,接入啤酒酵母,置于12~14℃恒温发酵2~3天,42~44℃真空旋转浓缩至原体积的1/2,得啤酒发酵浆;
(2)将石斛洗净,置于46~48℃干燥,粉碎,粒径为30~32μm,得石斛粉;
(3)将狗牙花叶、沿阶草、吉祥草、鹿药、菟丝子、黄芪、姜黄和枸杞粉碎,过120~140目筛,得中药粉,加入中药粉重量2倍量的纯净水,混合均匀,加入复合酶,破坏中药的组织结构,促进植酸盐释放金属离子,42~44℃水浴,酶解5~6小时,置于92~94℃水浴3~4小时,5000转/分钟,离心10~15分钟,去除沉淀,55~60℃浓缩至原体积的1/3,得中药提取液;
(4)将小麦粉加入啤酒发酵浆,混合均匀,加入石斛粉、壳聚糖和β-胡萝卜素,8~10转/分钟,搅拌7~9分钟,增强面条爽滑度,增强微循环,促进营养吸收,加入中药提取液和食盐,5~6转/分钟,搅拌10~12分钟,加入水和小麦低聚肽,使含水量为面团重量的43~45%(w/w),6~7转/分钟,搅拌8~10分钟,得面团;
(5)将面团置于温度为36~38℃,湿度为72~74%的环境中醒发20~30分钟,取出,得醒发面团;
(6)将醒发面团反复挤压4次,得面片,厚度为1.1~1.3mm,切条,宽度为2.6~2.8mm,得湿面条;
(7)将湿面条进行微波干燥,同时进行杀菌,频率为21~23MHz,干燥至水分含量为面条重量的9~11%(w/w),得富含小麦低聚肽的石斛营养面条;
(8)包装,强度为2.6~2.8KGy,辐射杀菌30~35分钟,检验,得成品。

实施例1
一种富含小麦低聚肽的石斛营养面条,由以下重量份的原料制成:小麦粉120、麦芽粉59、糙米粉39、石斛28、狗牙花叶4、沿阶草1.4、吉祥草1.3、鹿药1.3、菟丝子1.3、黄芪0.9、姜黄0.9、枸杞0.9、小麦低聚肽1.8、低聚半乳糖14、啤酒酵母4、食盐3、壳聚糖1.3、β-胡萝卜素1.3、复合酶0.04。
所述的糙米粉,粉碎粒径为26μm。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:植酸酶:脂肪酶:木聚糖酶=8:7:5:4:2。
一种富含小麦低聚肽的石斛营养面条的制备方法,具体的包括以下步骤:
(1)将麦芽粉和糙米粉混合均匀,加入麦芽粉重量3倍量的纯净水,搅拌均匀,加入低聚半乳糖,搅拌至完全溶化后,置于121℃灭菌15分钟,置于冷却间,流水冷却至10℃,接入啤酒酵母,置于12℃恒温发酵2天,42℃真空旋转浓缩至原体积的1/2,得啤酒发酵浆;
(2)将石斛洗净,置于46℃干燥,粉碎,粒径为30μm,得石斛粉;
(3)将狗牙花叶、沿阶草、吉祥草、鹿药、菟丝子、黄芪、姜黄和枸杞粉碎,过120目筛,得中药粉,加入中药粉重量2倍量的纯净水,混合均匀,加入复合酶,破坏中药的组织结构,促进植酸盐释放金属离子,42℃水浴,酶解5~6小时,置于92℃水浴3小时,5000转/分钟,离心10~15分钟,去除沉淀,55~60℃浓缩至原体积的1/3,得中药提取液;
(4)将小麦粉加入啤酒发酵浆,混合均匀,加入石斛粉、壳聚糖和β-胡萝卜素,8~10转/分钟,搅拌7分钟,加入中药提取液和食盐,5转/分钟,搅拌10分钟,加入水和小麦低聚肽,使含水量为面团重量的43%(w/w),6转/分钟,搅拌8分钟,得面团;
(5)将面团置于温度为36℃,湿度为72%的环境中醒发20分钟,取出,得醒发面团;
(6)将醒发面团反复挤压4次,得面片,厚度为1.1mm,切条,宽度为2.6mm,得湿面条;
(7)将湿面条进行微波干燥,同时进行杀菌,频率为21MHz,干燥至水分含量为面条重量的9%(w/w),得富含小麦低聚肽的石斛营养面条;
(8)包装,强度为2.6KGy,辐射杀菌30分钟,检验,得成品。
实施例2
一种富含小麦低聚肽的石斛营养面条,由以下重量份的原料制成:小麦粉115、麦芽粉58、糙米粉38、石斛27、狗牙花叶3.5、沿阶草1.3、吉祥草1.2、鹿药1.2、菟丝子1.2、黄芪0.8、姜黄0.8、枸杞0.8、小麦低聚肽1.7、低聚半乳糖13、啤酒酵母3.5、食盐2.5、壳聚糖1.2、β-胡萝卜素1.2、复合酶0.03~0.04。
所述的糙米粉,粉碎粒径为27μm。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:植酸酶:脂肪酶:木聚糖酶=9:8:5:4:2。
一种富含小麦低聚肽的石斛营养面条的制备方法,具体的包括以下步骤:
(1)将麦芽粉和糙米粉混合均匀,加入麦芽粉重量3倍量的纯净水,搅拌均匀,加入低聚半乳糖,搅拌至完全溶化后,置于121℃灭菌18分钟,置于冷却间,流水冷却至13℃,接入啤酒酵母,置于13℃恒温发酵2.5天,43℃真空旋转浓缩至原体积的1/2,得啤酒发酵浆;
(2)将石斛洗净,置于47℃干燥,粉碎,粒径为31μm,得石斛粉;
(3)将狗牙花叶、沿阶草、吉祥草、鹿药、菟丝子、黄芪、姜黄和枸杞粉碎,过130目筛,得中药粉,加入中药粉重量2倍量的纯净水,混合均匀,加入复合酶,破坏中药的组织结构,促进植酸盐释放金属离子,43℃水浴,酶解5.5小时,置于93℃水浴3.5小时,5000转/分钟,离心13分钟,去除沉淀,58℃浓缩至原体积的1/3,得中药提取液;
(4)将小麦粉加入啤酒发酵浆,混合均匀,加入石斛粉、壳聚糖和β-胡萝卜素,9转/分钟,搅拌8分钟,加入中药提取液和食盐,5转/分钟,搅拌11分钟,加入水和小麦低聚肽,使含水量为面团重量的44%(w/w),6转/分钟,搅拌9分钟,得面团;
(5)将面团置于温度为37℃,湿度为73%的环境中醒发25分钟,取出,得醒发面团;
(6)将醒发面团反复挤压4次,得面片,厚度为1.2mm,切条,宽度为2.7mm,得湿面条;
(7)将湿面条进行微波干燥,同时进行杀菌,频率为22MHz,干燥至水分含量为面条重量的10%(w/w),得富含小麦低聚肽的石斛营养面条;
(8)包装,强度为2.7KGy,辐射杀菌33分钟,检验,得成品。
实施例3
一种富含小麦低聚肽的石斛营养面条,由以下重量份的原料制成:小麦粉120、麦芽粉59、糙米粉39、石斛28、狗牙花叶4、沿阶草1.4、吉祥草1.3、鹿药1.3、菟丝子1.3、黄芪0.9、姜黄0.9、枸杞0.9、小麦低聚肽1.8、低聚半乳糖14、啤酒酵母4、食盐3、壳聚糖1.3、β-胡萝卜素1.3、复合酶0.04。
所述的糙米粉,粉碎粒径为28μm。
所述的复合酶,由以下重量比的酶制剂组成:纤维素酶:半纤维素酶:植酸酶:脂肪酶:木聚糖酶=9:8:6:5:3。
一种富含小麦低聚肽的石斛营养面条的制备方法,具体的包括以下步骤:
(1)将麦芽粉和糙米粉混合均匀,加入麦芽粉重量3倍量的纯净水,搅拌均匀,加入低聚半乳糖,搅拌至完全溶化后,置于121℃灭菌20分钟,置于冷却间,流水冷却至15℃,接入啤酒酵母,置于14℃恒温发酵3天,44℃真空旋转浓缩至原体积的1/2,得啤酒发酵浆;
(2)将石斛洗净,置于48℃干燥,粉碎,粒径为32μm,得石斛粉;
(3)将狗牙花叶、沿阶草、吉祥草、鹿药、菟丝子、黄芪、姜黄和枸杞粉碎,过140目筛,得中药粉,加入中药粉重量2倍量的纯净水,混合均匀,加入复合酶,破坏中药的组织结构,促进植酸盐释放金属离子,44℃水浴,酶解6小时,置于94℃水浴4小时,5000转/分钟,离心15分钟,去除沉淀,60℃浓缩至原体积的1/3,得中药提取液;
(4)将小麦粉加入啤酒发酵浆,混合均匀,加入石斛粉、壳聚糖和β-胡萝卜素,10转/分钟,搅拌9分钟,加入中药提取液和食盐,6转/分钟,搅拌12分钟,加入水和小麦低聚肽,使含水量为面团重量的45%(w/w),7转/分钟,搅拌10分钟,得面团;
(5)将面团置于温度为38℃,湿度为74%的环境中醒发30分钟,取出,得醒发面团;
(6)将醒发面团反复挤压4次,得面片,厚度为1.3mm,切条,宽度为2.8mm,得湿面条;
(7)将湿面条进行微波干燥,同时进行杀菌,频率为23MHz,干燥至水分含量为面条重量的11%(w/w),得富含小麦低聚肽的石斛营养面条;
(8)包装,强度为2.8KGy,辐射杀菌35分钟,检验,得成品。
对比例
市售普通面条。
实施例面条的主要营养成分测定:
取一定数量的实施例面条,对其主要营养成分进行测定,结果见表1。

从表1能够看出,实施例的富含小麦低聚肽的石斛营养面条,小麦低聚肽、硒和锌的含量丰富,完全可以满足人体需要。
实施例和对比例面条断条率和煮沸损失率的检测:
断条率:取40根面条放入沸水中,保持水的沸腾状态煮4min,用竹筷轻轻挑出,计算熟面条断条率。
熟断条率(%)=断面条根数/40×100%
煮沸损失:将测断条率煮面后的面汤放至室温后,倒入500ml容量瓶中,蒸馏水冲洗数次,并将冲洗的水一并转入容量瓶中,定容至500ml并混合均匀。量取200ml面汤,放入250ml烧杯中,先在电炉上加热蒸发掉大部分面汤后,再将其放入105℃烘箱烘至恒重。
蒸煮损失率(%)=2.5M/[G×(1-W)]×100%
式中:M-200ml面汤中干物质的质量(g);
G-煮前面条的质量(g);
W-煮前面条的水分含量(%)。
取一定数量的实施例和对比例面条,放入盛有500ml沸水的锅中煮4min,立即将面条捞出,置于凉水中浸水30s,于漏水网丝容器中沥干,再用滤纸吸干面条表面水分,用保鲜膜包裹待测。
对实施例和对比例面条进行检测,断条率和煮沸损失率的检测结果见表2。

实施例和对比例面条的感官评定:
随机选择18~65岁的受试者40位,对实施例和对比例面条的进行感官评定,并打分,每项满分为10分,取平均值。实施例和对比例面条的感官评定结果见表3。

从表3能够看出,实施例的富含小麦低聚肽的石斛营养面条,色泽微黄、光亮,细腻爽滑,不黏牙,不混汤,软硬适中,耐咀嚼,富有弹性,醇香浓郁,得到广大消费者的喜爱。
实施例和对比例面条的降血糖功能:
随机选择200只高血糖小白鼠,随机分为4组,每组50只,测定各组小白鼠的起始血糖浓度;实施例组和对比例组小白鼠灌喂该组的面条2.5克/天,其它条件相同且适宜,连续灌喂5周后测定各组小白鼠的血糖浓度,受试前后均在一天的相同时间进行血糖测定。实施例和对比例面条的降血糖功能结果见表4。

1. 一种富含小麦低聚肽的石斛营养面条,其特征在于,由以下重量份的原料制成:小麦粉110~120、麦芽粉57~59、糙米粉37~39、石斛26~28、狗牙花叶3~4、沿阶草1.2~1.4、吉祥草1.1~1.3、鹿药1.1~1.3、菟丝子1.1~1.3、黄芪0.7~0.9、姜黄0.7~0.9、枸杞0.7~0.9、小麦低聚肽1.6~1.8、低聚半乳糖12~14、啤酒酵母3~4、食盐2~3、壳聚糖1.1~1.3、β-胡萝卜素1.2~1.3、复合酶0.03~0.04。
2. 根据权利要求1所述富含小麦低聚肽的石斛营养面条,其特征在于,所述的糙米粉,粉碎粒径为26~28μm。
3. 根据权利要求1所述富含小麦低聚肽的石斛营养面条,其特征在于,所述的石斛,种植过程经营养强化,富含矿质元素硒和锌,其中硒含量为11~13μg/g,锌含量为17~19mg/g。
4. 根据权利要求1所述富含小麦低聚肽的石斛营养面条,其特征在于,所述的啤酒酵母,已经进行活化。
