技术领域
本发明涉及一种婴幼儿营养米粉,尤其涉及一种添加新鲜果蔬的多彩婴幼儿营养米粉及其制备方法。
背景技术
婴幼儿营养米粉是6个月以上婴幼儿的谷类辅助食品,是在母乳或婴幼儿配方食品不能满足婴幼儿营养需要以及在婴幼儿断奶期间,为补充婴幼儿营养的辅助食品。
婴幼儿各种生理机能均未发育成熟、消化吸收能力较差,因此对婴幼儿的营养和膳食有着特殊的要求,以便提供他们生长发育所需要的全面营养。然而,如今的婴幼儿普遍存在膳食结构不合理,营养素摄入不平衡,偏食,挑食等不良饮食习惯。新鲜果蔬含有丰富的营养,能为婴幼儿提供在生长发育过程中的部分营养需求,但大部分婴幼儿又都不太爱吃水果蔬菜,尤其是蔬菜。
婴幼儿对色彩比较敏感,对其进行有针对性的色彩视觉刺激,是进行婴幼儿早期进食教育的一部分。
目前市场上流通的婴幼儿营养米粉种类繁多,但在现市售流通状态下的婴幼儿营养米粉普遍为谷物的本色,对婴幼儿的色彩视觉刺激不足。
目前只有少量关于多彩婴幼儿营养米粉的应用研究。公开号为CN102771692A的中国专利申请公开了一种含益生菌的婴幼儿多彩营养米粉,其包含各组分的重量百分含量分别是:有机大米60-80%、白砂糖5-20%、各种口味粉1-10%、复合营养强化剂0.2-2%、真菌淀粉酶0.0001-0.1%、鼠李糖乳杆菌2-10%、乳双歧杆菌2-10%。但该专利申请侧重于为婴幼儿提供益生菌(鼠李糖乳杆菌、乳双歧杆菌),用于改善婴幼儿的肠道健康;其表现的多彩是通过生产后期添加市售的经处理后的果蔬口味粉,与本发明在生产过程中让新鲜果蔬充分与米粉融合呈现的多彩具有本质的区别。本发明人经过深入研究,针对婴幼儿的生理期特点及现阶段膳食结构不合理的现状和现市售流通状态的情况,结合婴幼儿早期进食教育色彩视觉刺激的需要,开发了本发明的添加新鲜天然果蔬的多彩婴幼儿营养米粉。本发明提供的多彩婴幼儿营养米粉,果蔬的色彩和营养与米粉完美的融合在一起,果蔬的色彩开袋即展现,果蔬的新鲜和活力看得见,增加宝宝的进食乐趣,让宝宝从此爱上水果蔬菜。同时,本发明产品不仅具有天然果蔬的自然色彩,而且口感良好,还具有丰富的蛋白质、多种维生素和矿物质,添加的低聚果糖(FOS)和低聚半乳糖(GOS)对婴幼儿肠道的健康调理提供物质基础,维生素和矿物质有益于身体的发育,特别是水果蔬菜中的膳食纤维,能促进胃肠道对钙、镁等矿物质的吸收,有益于营养消化吸收和肠道健康。另外,本发明产品还具所添加果蔬的果蔬味,能刺激婴幼儿的味觉,增进食欲感,对婴幼儿而言是一种十分有益的辅助食品。
发明内容
本发明的目的在于提供一种添加新鲜果蔬的多彩婴幼儿营养米粉及其制备方法,解决了目前市场上未有将果蔬融入婴幼儿营养米粉的空白。
本发明是这样实现的,其特征在于:由下列重量份的原料组成:大米80-95份、葡萄糖和/或白砂糖10-15份、新鲜果蔬(去皮去核)15-25份、低聚果糖0.1-3份、低聚半乳糖0.1-3份、复配维生素预混料0.02-0.1份、复配矿物质预混料1-5份。
优选重量份的原料为:大米85-90份、葡萄糖和/或白砂糖10-12份、新鲜果蔬(去皮去核)18-24份、低聚果糖0.5-1份、低聚半乳糖0.5-1份、复配维生素预混料0.05-0.1份、复配矿物质预混料1-5份。
一种添加新鲜果蔬的多彩婴幼儿营养米粉的制备方法包括以下制备步骤:
(1) 制备果蔬浆:新鲜果蔬,经洗净去皮去核后榨汁制浆,得到果蔬浆;
(2) 洗米、粉碎:将大米淘洗干净,滤干大米的水分,粉碎,得到湿米粉;
(3) 配料混合:按所述重量份称取其它原料组份,与步骤(1) 所得的果蔬浆和步骤(2) 所得的湿米粉一并加入至配料缸中混合均匀;
(4) 均质预糊化:在15-18Mpa 压力条件下进行均质,保持10-25分钟,加热至60-65℃进行预糊化;
(5) 蒸煮烘干:用蒸汽滚筒干燥进行蒸煮压制烘干成为薄片,蒸汽压0.2-0.3Mpa之间,烘干后米粉薄片的水分不高于总质量5.0% ;
(6) 成型粉碎:将烘干后米粉薄片破碎过筛,筛孔直径为1.5-2.5mm,使之成为大小均一的米粉片状产品;
(7) 灌装:将粉碎成型后的米粉片进行无菌灌装,得成品。
本发明的技术效果是:与现有技术相比,本发明工艺简单,更为合理地设计了婴幼儿营养米粉的配方,而且将新鲜果蔬的健康成分和营养与婴幼儿营养米粉营养成分科学融合在一起,使婴幼儿营养米粉在具有丰富营养的基础之上还具有多姿多彩的天然色彩,能较好的对婴幼儿早期进食教育进行色彩视觉刺激;同时水果蔬菜中含有的健康成分也会给婴幼儿的健康带来一定的特殊营养价值,诸如:促进婴幼儿胃肠道对钙、镁等矿物质元素的吸收,有益于营养消化吸收和肠道健康;同时本多彩营养米粉还具有所添加果蔬的果蔬味,能刺激婴幼儿的味觉,增进食欲感。
具体实施方式
以下对本发明进行详细说明。
本发明是这样实现的,由下列重量份的原料组成:大米80-95份、葡萄糖和/或白砂糖10-15份、新鲜果蔬(去皮去核)15-25份、低聚果糖0.1-3份、低聚半乳糖0.1-3份、复配维生素预混料0.02-0.1份、复配矿物质预混料1-5份。
优选重量份的原料为:大米85-90份、葡萄糖和/或白砂糖10-12份、新鲜果蔬(去皮去核)18-24份、低聚果糖0.5-1份、低聚半乳糖0.5-1份、复配维生素预混料0.05-0.1份、复配矿物质预混料1-5份。
一种添加新鲜果蔬的多彩婴幼儿营养米粉的制备方法包括以下制备步骤:
(1) 制备果蔬浆:新鲜果蔬,经洗净去皮去核后榨汁制浆,得到果蔬浆;
(2) 洗米、粉碎:将大米淘洗干净,滤干大米的水分,粉碎,得到湿米粉;
(3) 配料混合:按所述重量份称取其它原料组份,与步骤(1) 所得的果蔬浆和步骤(2) 所得的湿米粉一并加入至配料缸中混合均匀;
(4) 均质预糊化:在15-18Mpa 压力条件下进行均质,保持10-25分钟,加热至60-65℃进行预糊化;

其中,所述的新鲜果蔬为胡萝卜、香蕉、草莓、番茄、苹果、山楂、南瓜、水蜜桃、梨、葡萄、木瓜、枇杷、紫薯、芹菜、凤梨、嫩玉米、菠菜、蓝莓、哈密瓜、猕猴桃的一种或多种的混合物。
所述的复配维生素预混料为维生素A醋酸酯、胆钙化醇、盐酸硫胺素、核黄素、烟酰胺中的一种或多种的混合物,或符合《营养强化剂使用标准》(GB 14880-2012)附录C规定的一种或多种。
所述的复配矿物质预混料中的矿物质为碳酸钙、磷酸氢钙、焦磷酸铁、氧化锌、碘化钾中的一种或多种的混合物,或符合《营养强化剂使用标准》(GB 14880-2012)附录C规定的一种或多种。
本发明所使用的食品配料均为食品级;所使用的水指符合国家《生活饮用水卫生标准》(GB5749-2006) 规定的纯净水。
上述实施例为本发明较佳的实施方式,但本发明的实施方式并不受上述实施例的限制,其他的任何未背离本发明的精神实质与原理下所作的改变、修饰、替代、组合或简化,均应为等效的置换方式,都包含在本发明的保护范围之内。
Claims (3)
1.一种添加新鲜果蔬的多彩婴幼儿营养米粉,其特征在于:由下列重量份的原料组成:大米80-95份、葡萄糖和/或白砂糖10-15份、新鲜果蔬(去皮去核)15-25份、低聚果糖0.1-3份、低聚半乳糖0.1-3份、复配维生素预混料0.02-0.1份、复配矿物质预混料1-5份。
2.根据权利要求1所述的一种添加新鲜果蔬的多彩婴幼儿营养米粉,其特征在于优选重量份的原料为:大米85-90份、葡萄糖和/或白砂糖10-12份、新鲜果蔬(去皮去核)18-24份、低聚果糖0.5-1份、低聚半乳糖0.5-1份、复配维生素预混料0.05-0.1份、复配矿物质预混料1-5份。
3.一种权利要求1所述的一种添加新鲜果蔬的多彩婴幼儿营养米粉的制备方法,其特征在于包括以下制备步骤:
(1) 制备果蔬浆:新鲜果蔬,经洗净去皮去核后榨汁制浆,得到果蔬浆;
(2) 洗米、粉碎:将大米淘洗干净,滤干大米的水分,粉碎,得到湿米粉;
(3) 配料混合:按所述重量份称取其它原料组份,与步骤(1) 所得的果蔬浆和步骤(2) 所得的湿米粉一并加入至配料缸中混合均匀;
