Abstract
Los poliésteres, tales como los formados mediante el uso de polioles y ácidos di- o tricarboxílicos o anhídridos o sales de estos, se usan como agentes de control de espuma en el procesamiento de alimento. Los poliésteres son biodegradables y biocompatibles al tiempo que aún proporcionan una excelente capacidad de control de espuma. Además, se pueden usar agentes de control de espuma de poliésteres de la descripción con diversos aparatos al tiempo que se evita la formación de películas que de otro modo afectarían el funcionamiento del aparato. Los poliésteres se pueden usar en diversas etapas durante el procesamiento industrial de verduras (por ejemplo, papas y remolachas) y frutas.
