Abstract

La invención describe la obtención de polvos estables de pulpa de aguacate con larga vida de anaquel a temperatura ambiente sin la necesidad de utilizar conservadores naturales o sintéticos, lo que permite preservar los componentes naturales de la pulpa y las propiedades organolépticas del fruto. Los polvos de la invención permiten la obtención de productos compactados, tales como pastillas con aplicaciones alimenticias o cosméticas. Se describen también métodos de deshidratación para la obtención del polvo de la invención que incluye la deshidratación de la pulpa de aguacate mediante microondas y flujo de aire caliente de forma simultánea, lo que permite la obtención de polvos con bajas actividades acuosas y la eliminación de actividades enzimáticas indeseables propias del fruto sin la adición de conservadores.
