A salty citrusy (slightly sweet) Japanese sauce, perfect for dishes like Kingfish Sashimi, or Beef Tataki.

Being used most of often on dishes that are pared back; it’s important to use high quality ingredients.  This sauce will truly be the sum of its parts.

Using a method I’ve adapted from Diversivore.

Ingredients:

Base Sauce:
250g shoyu/soy sauce 
6g Kombu (1-2 piece)
2 Yuzu/Lemon/Citrus rinds
20g Katsuobushi
50g Sake
50g Mirin

Vinegar: 
50g Sake
50g Mirin
150g Rice Vinegar
45g Sugar

Citrus:
150g Yuzu juice
50g Lemon juice
100g Tamari

Method:
Mix together all base ingredients, leave for 24hr covered.

Add Vinegar ingredients together Beef Tataki Ponzu, Kingfish Sashimi, Beef Tataki, Japanese Sauce, Butter Sauce, Rice Vinegar, Lemon Juice, Soy Sauce, Vinegar
