Grilled delicata squash

Roasted delicata squash is buttery, nutty, and sweet. We love this recipe with garlic and parmesan. It’s easy enough for tonight and works beautifully as a holiday side. There is no need to peel the squash. The peel is thin and is delicious once roasted.

Delicata squash is actually named for its delicate, edible skin. Half-inch slices grill up quickly, and the lovely caramelization enhances the flavor.

Delicata Squash Gruyère Gratin... three of my favorite things. This gratin is an indulgence. The sweet, creamy delicata squash melts into the creamy, nutty backdrop of Gruyère cheese punctuated by hints of thyme and sage.

One of the best ways to make roasted delicata squash, inspired by my friend Molly Watson. This recipe uses the pretty, scalloped-edged cross-cuts of the delicata squash, a few small potatoes, chopped kale, radishes, almonds and a bold miso harissa dressing.
