BOTANICAL DESCRIPTION
1. Plant Type: Tomato plants are typically annuals, meaning they complete
their life cycle within a year. However, in favorable climates, they may
persist as perennials.
2. Stem: The stem of a tomato plant is typically herbaceous, meaning it is
non-woody and flexible. It can grow both upright or as a sprawling vine
depending on the variety and support system.
3. Leaves: The leaves of a tomato plant are compound, meaning each leaf is
composed of several smaller leaflets. They are typically arranged
alternately along the stem and are usually covered in fine hairs. The leaves
can vary in size and shape depending on the variety.
4. Flowers: Tomato plants produce yellow flowers that are typically 1 to 2
centimeters in diameter. These flowers are borne in clusters and have a
distinctive five-petaled shape. They are hermaphroditic, containing both
male and female reproductive organs.
5. Fruit: The fruit of the tomato plant is technically a berry, though it is commonly
referred to as a vegetable due to its culinary uses. It varies in size, shape, and color
depending on the cultivar, ranging from small cherry tomatoes to large beefsteak
tomatoes. The fruit typically starts green and ripens to yellow, orange, red, or even
purple, depending on the variety.
6. Roots: Tomato plants have a fibrous root system, with a primary taproot that
branches out into smaller roots. These roots help anchor the plant in the soil and
absorb water and nutrients.
7. Height: Tomato plants can vary widely in size, with determinate varieties typically
reaching a height of 3 to 5 feet (0.9 to 1.5 meters) and indeterminate varieties
growing taller, sometimes reaching heights of 6 to 10 feet (1.8 to 3 meters) or more
if provided with appropriate support.
8. Growing Habit: Tomato plants can exhibit either determinate or indeterminate
growth habits. Determinate varieties grow to a certain height and then stop,
producing a finite number of fruit clusters. Indeterminate varieties continue to grow
and produce fruit throughout the growing season until they are killed by frost or
other environmental factors.
Types of Tomato Products
1. Tomato Sauce:This is a smooth, thin sauce made from chopped tomatoes, typically with
added seasonings like salt, basil, and oregano. It’s a versatile ingredient that can be
used in a variety of dishes, from pasta sauces to pizzas to stews.
2. Tomato Purée: Similar to tomato paste, tomato purée is a thick, concentrated product
made from cooked and strained tomatoes. However, it is not as thick or as intense in
flavor as tomato paste. It can be used in place of tomato paste or as a base for sauces
and soups.
3. Crushed Tomatoes: These are tomatoes that have been crushed or
chopped into small pieces, with their juices. They are a good option for
dishes where you want some chunky tomatoes, such as pasta sauce, chili,
or minestrone soup
4. Diced Tomatoes: These are tomatoes that have been diced into small
cubes. They are similar to crushed tomatoes, but they have a more
uniform texture. Diced tomatoes can be used in a variety of dishes, such
as salads, soups and stews.
5. Peeled Tomatoes: These are whole tomatoes that have had their skins
removed. They can be chopped, crushed, or puréed and used in any dish
that calls for tomatoes.
6. Sun-dried Tomatoes: These are tomatoes that have been dried in the
sun, which concentrates their flavor. They have a sweet, intense tomato
flavor and a chewy texture. Sun-dried tomatoes can be used in a variety
of dishes, such as pasta salads, pizzas, and dips
SUN-DRIED TOMATOES
PROCEDURE:-
STEP 1: Choose firm, ripe tomatoes. Store tomatoes waiting to be dried at room temperature.
STEP 2:- Wash tomatoes under running water.
STEP 3:- Prepare tomatoes for drying.
STEP 4:- Dry in a dehydrator.
STEP 5:- Test for dryness.
STEP 6:- Store in bags.
STEP 7: Eat and enjoy.
BENEFITS:-
Sun-dried tomatoes can be used in a wide variety of recipes and come in a variety of shapes, colors,
and types of tomato. Traditionally, they were made from dried red plum tomatoes, but they can be
purchased in yellow varieties. Sun-dried tomatoes are also available in the form of pastes or purées.
FAVOURABLE CONDITIONS:-
Store tomatoes waiting to be dried at room temperature, not in the refrigerator. Dry in a dehydrator
set at 140 F. Dry for 10 to 18 hrs Prepare the tomatoes by washing them in cool, drinkable water.
Tomato Sauce
It is made from strained tomato
juice or pulp and spices, salt, sugar
and vinegar, with or without onion
and garlic, and contains not less
than 12 per cent tomato solids and
25 per cent total solids.
STORAGE:
Tomato puree should be stored in a cool, dry place away from direct sunlight.
Temperature-0°C to 4°C (32°F to 39°F).
Tomato soup
It is packed with vitamins C and K, antioxidants like lycopene, and helps hydrate the body
due to its high-water content.
- We should store tomato soup in an airtight container in the fridge to prevent bacteria
growth.
- We should keep it covered to maintain texture and flavour by preventing moisture loss.
- Consume within 3-4 days for freshness and safety.
- When reheating, make sure it reaches a minimum of 165°F (74°C) for safe consumption.

Tomato ketchup
- It is a condiment made from tomatoes, vinegar, sugar, and spices. It has a thick and smooth
texture and is used as a topping or ingredient in various dishes.

protect against certain cancers. It also provides vitamins A and C, which support a healthy
immune system.
- To store tomato ketchup, keep it in a cool and dry place. After opening, it's best to store it in
the refrigerator to maintain quality and prevent spoilage. Make sure to tightly close the
bottle to avoid air exposure and contamination.
