RATIONALE AND BACKGROUND OF THE STUDY

Introduction

Pizza is a yeasted flatbread typically topped with tomato sauce and cheese and

baked in an oven. It is commonly topped with a selection of meats and condiments but

on our version of pizza we will not use meat but we will use vegetable as our main

version of our pizza.

Pizza is sold fresh or frozen, either whole or in portions, and is a common fast

food item. Various types of ovens are used to cook them and many varieties exist. The

word "pizza" first appeared in a Latin text from the southern Italy town of Gaeta, then

still part of the Byzantine Empire, in 997 AD; the text states that a tenant of certain

property is to give the bishop of Gaeta duodecim pizze ("twelve pizzas") every Christmas

Day, and another twelve every Easter Sunday. The term pizza was first recorded in the

10th century, in a Latin manuscript from Gaeta in Central Italy. Modern pizza was

invented in Naples, Italy, and the dish and its variants have since become popular and

common in many areas of the world.

Foods similar to pizza have been made since the neolithic age. Records of people

adding other ingredients to bread to make it more flavorful can be found throughout

ancient history. The ancient Greeks supplemented their bread with oils, herbs and

cheese, or hops, and in the 6th century BC, the soldiers in Persian King Darius I's armies

baked flatbreads with cheese and dates on top of their battle shields. An early reference

to a pizza-like food occurs in the Aeneid, when Celaeno, queen of the Harpies, foretells

that the Trojans would not find peace until they are forced by hunger to eat their tables

(Book III). In Book VII, Aeneas and his men are served a meal that includes round cakes
2
(like pita bread) topped with cooked vegetables. When they eat the bread, they realize

that these are the "tables" prophesied by Celaeno.

Pizza, like so many other foods, did not originate in the country for which it is

now famous. Unless you have researched the subject, you, like so many people,

probably always thought Pizza was strictly an Italian creation.

The foundations for Pizza were originally laid by the early Greeks who first baked

large, round and flat breads which they “anointed with oil, herbs, spices and Dates.”

Tomatoes were not discovered at that time or, very likely, they would have used them

as we do today.

Eventually the idea of flat bread found its way to Italy where, in the 18th

century, the flat breads called “Pizzas”, were sold on the streets and in the markets.

They were not topped with anything but were enjoyed au naturel. Since they were

relatively cheap to make, were tasty and filling, they were sold to the poor all over

Naples by street vendors. The acceptance of the tomato by the Neapolitans and the visit

of a queen contributed to the Pizza as we know and enjoy it today.

In about 1889, Queen Margherita, accompanied by her husband, Umberto I,

took an inspection tour of her Italian Kingdom. During her travels around Italy she saw

many people, especially the peasants, eating this large, flat bread.

Curious, the queen ordered her guards to bring her one of these Pizza breads. The

Queen loved the bread and would eat it every time she was out amongst the people,

which caused some consternation in Court circles. It was not seemly for a Queen to dine

on peasant’s food. Never the less, the queen loved the bread and decided to take
3
matters into her own hands. Summoning Chef Raffaele Esposito from his pizzeria to the

royal palace, the queen ordered him to bake a selection of pizzas for her pleasure.

To honor the queen who was so beloved by her subjects, Raffaele decided to

make a very special pizza just for her. He baked a Pizza topped with tomatoes,

Mozarella Cheese, and fresh Basil (to represent the colors of the Italian flag: Red, white,

and green).

This became Queen Margherita’s favorite pizza and when word got out that this

was one of the queen’s favorite foods, she became even more popular with the Italian

people. She also started a culinary tradition, the Pizza Margherita, which lasts to this

very day in Naples and has now spread throughout the world.

As one of the most popular dishes. Pizza has benefits of its consumption. Many

scientists tested the impact and long-term effects of pizza on our metabolism. One of

the most common misconceptions about pizza is that they are the part of the so called

"fast food" types of foods.

Vegetable pizza is very nutritional meal that can provide adequate sustenance to

our body and metabolism. Tomato Sauce represent one of the basic and most used

components of pizza topping. In its structure tomato contains Lycopene (tomatoes

processed into sauce have more lycopene in it than unprocessed ones) which is known

to be powerful antioxidant which helps in fight against many different types of cancer.

Studies have shown that people who eat pizza at least once a week have a smaller

chance to get ill for several forms of cancer (mouth, stomach, lung, prostate and more).

Some of the other ingredients have positive effect on our metabolism - olive oil reduces

bad cholesterol and increase good one and prevent heart diseases, Cheese is rich with
4
fats, protein, calcium and sodium, garlic is rich with selenium, manganese, vitamin C and

other beneficial compounds and also the primary ingredients is vegetable which is very

nutritious and good to our health.

They can be made in such way to have great taste and still have low amounts of

fat and cholesterol that are normally associated with meals with vegetable and cheese.

Cheese toppings on pizzas are also excellent source of calcium, which reduced the

possibility of colon cancer. However, for healthier diet we recommend reducing the

amount of cheese (it after all has high amount of fat), and instead using more tomato

sauce. The good combination of crust, cheese, toppings can be used for creation of

healthy pizza that will surely be good for everyone organism. Pizza created in the proper

way, with the quality ingredients can definitely be classified as a "health food". The

recipe for such pizza consist of using whole wheat crust, extra virgin olive oil, a limited

amount of cheese, no extra salt, and top it with vegetable toppings.

Business Name

The business name is JAM Pizza which come from the initials of our first name.

Business Logo

Figure 11. Business Logo Human Resources

Human resource management is a contemporary, umbrella term used to describe

the management and development of employees in an organization. Also called personnel

or talent management resource management involves overseeing all things related to

managing an organization’s human capital. The management aspect of this research is

65

composed of techniques and strategies that will not only benefit the company but will also

improve the skills of the employees. This will be done through proper selection and training

of employees. Each employee will have their specific responsibilities and duties based on

their skills in building up a business.

66

Employees that will be assigned in the production of pizza will be taught before the

business start. Four workers which consist of cook, book keeper, service crew and

cashier will be hired. There will be designated task assigned to each one of them.

And the owners will also act as the managers.

The manager will supervise the business and see if the workers meet the standard of

the business. And the owners will also act as the managers. When the business has

started running regularly, proper policies will be implemented and regular inspection

will be done. The company will also give incentives to the employees. There will also

be some team building activities to make time for the employee’s bond and have a

positive relationship with each other.

Health and safety management

Vegetable pizzas are more nutritious than meat pizzas, especially if you get a

pizza with a whole-wheat crust, they can still contain a lot of calories. Choose a thin-

crust pizza to save calories, or make your pizza at home for more control over the

ingredients and thus the calories of the resulting pizza.

The typical vegetables used on pizza contain very few calories, so the calories in

a slice of veggie pizza are only slightly higher than those in cheese pizza. Half a cup of

sliced mushrooms adds 8 calories, a tablespoon of chopped onions has 4 calories and a

tablespoon of chopped green peppers has 8 calories. A slice from a 14-inch thin-crust

cheese pizza has 230 calories.

67

Choosing a regular crust will increase the calories to 285 per slice, while opting for a

thick crust increases the calories to 312. This is still fewer calories than a slice of regular-

crust pepperoni pizza, with 313 calories, or sausage pizza, with 325 calories.

The calories in a serving of frozen vegetable pizza, which is usually about one-

third of the pizza, range from about 240 to 340, depending on the brand of pizza. A

homemade vegetable pizza with a whole-wheat crust, zucchini, peppers, mushrooms

and reduced-fat feta cheese has 185 calories for one-fourth of an 8inch pie, and a pizza

with mushrooms, peppers and part-skim mozzarella that has 345 calories for one-sixth

of a pie made with a 16-ounce Italian-bread-style pizza shell.

The researcher also considers their social responsibility in the production of JAM

Pizza. We all know that one of the major issues of our country is global warming.

Pollution is one of the main causes of global warming.

The production of JAM Pizza is more focus on the quality and safety of the

product rather than quantity. The company makes sure that waste produce by the

production will be disposed properly. We will ensure the health of our workers as well

our customers to give high quality product.
