This module covers the skills, knowledge and attitudes required to help the
learners on the proper used of Cleaning materials used in kitchen tools, equip-
ment and working area. The scope and coverage of this module will allow the
learners to use in many different learning situations. TLE_HECK7/8MT- 0b-2

After completing this module, the learner should be able to:


1. identify the different types of cleaning materials used in kitchen tools,
utensils and equipment.
2. clean kitchen tools, equipment and working area according to stand-
ard procedure.
3. appreciate the importance of cleaning the different types of kitchen

Kitchen is considered as laboratory or place where the food is cooked and
prepared. Aside from proper hygiene, every individual must ensure that the tools
used in food contact surface must be thoroughly cleaned and sanitized. We ensure
that food we cook and serve are not only delicious and nutritious but also safe for
the human consumption.
At the end of the lesson, learners are able to select various types of
cleaning materials used in kitchen tools, utensils and equipment, Identify the dif-
ferent types of cleaning materials used in kitchen tools, utensils, equipment and
cleaned kitchen tools, equipment and working area according to standard proce-
dure

MAINTAIN KITCHEN TOOLS, EQUIPMENT AND WORKING AREA

Food is very essential in human’s life. It is not because of feeding empty stomach
but also giving the excitement, happiness and satisfaction of every individual. How-
ever we must also consider the safety of ourselves and the people we serve, one
must have a proper personal hygiene and self-grooming, and we must also assure
that all kitchen utensils, equipments and work area must be cleaned thoroughly
and sanitized. Cleaning and sanitizing are both essential for the safety of hu-
man’s life. Cleaning is the process of removing dirt or soil in the food contact sur-
face, food contact surface are those things we use directly that touches our food,
like knives, pans, utensils, chopping board etc., while sanitizing refers to reducing
the occurrence and growth of bacteria, fungi and other microorganism that are
properly cleaned to a safe level for human.

Below is the list of different cleaning materials that are safe to use with proper
guidance.

CLEANING MATERIALS AND USES

1. Lemon – is rich in vitamins C and its zest can be used in dif-


ferent delicacies or dishes. Lemon helps to lighten the dark ar-
eas of our body but it can also use as a cleaning agent.
Mixvinegar, baking soda and lemon to produce a cleaning
paste.

2. Vinegar – It is very useful in every household. It is used for


cooking just like lemon. Vinegar can also be used as a deodoriz-
er and disinfectant for the countertops. It is made of acetic acid
which kills bacteria. The best type of vinegar to use is the white
vinegar because it does not contain any coloring agent. For
cleaning, spray the ratio is 1:1 or one-part of water and one-part
vinegar. For tough stains, add a few drops a dishwashing soap,

one part of water and two parts of vinegar. The mixture is smelly but it will dis-
appear in a couple of minutes. You can use vinegar to disinfect the faucets, glass
window, countertops, toilet, floors, dishwasher, shower and tubs. Don’t use vin-
egar in marbles and granite because it can lose its shine and become dull.

3. Baking soda -Used in many baking products, this substance


can also be used as deodorizer. Put baking soda in the fridge
or refrigerator to absorb unwanted odor and change it after
one month. Baking soda can also be used to de-clog the sink
by putting half cup of soda followed by half cup vinegar. Clean
the bed foam and remove the dirt or waxy coating from vegeta-
ble and fruit from the supermarket.

4. Detergent- detergent is the most popular cleaning material used


in all houses and commercial kitchen or laboratory because it is
easy to wash away the dirt and soil in a surface. However, not all
detergent can be used in utensils for cleaning. One must deter-
mine the appropriate type of detergent to be used in different sur-

5. Solvent- there are many types of solvent so be careful in using


it. Not all solvent cleaners are safe to use whether organic or
inorganic. These cleaning materials are also called de-greaser
which can remove the burnt fats residue in stove or other sur-
face.

6. Acid cleaner - these cleaning materials are best for remov-


ing mineral deposit and other dirt that detergent cannot
eliminate like scale in washing machine, steam tables, lime
buildup in dishwashing machine and rust.

7. Abrasive cleaners – this material removes heavy amount of
dirt, stains and hard water deposits. The level of abrasiveness
of product may vary into two, fine particles are less abrasive
and course particles are more abrasive. This cleaning material
contains different ingredients, small particles of minerals like
silica, pumice, and feldspar. There are different kinds of abra-
sive cleaning materials: dry abrasive and wet abrasive, abra-
sive tools and disinfecting abrasive. Remember that too much
use of this material can remove the luster of the surface. Always check the man-
ufacturer’s manual for further instruction.

8. Tea tree oil – this essential oil has lots of use and benefits. It helps treat nail
fungus and antiseptic for mild cuts and wound. It can be applied in skin for
smoother skin and is also used as a cleaning materials. This essential is more
expensive than the other cleaning materials but it’s really worth it because it re-
moves mold, mildew and leaves a relaxing and aroma fragrant.

CLEANING KITCHEN TOOLS, EQUIPMENT AND WORKING PREMISES

Kitchen is a place or area where the food is prepared and it serves as the
working area. There are three simple steps to follow in cleaning our tools and
equipment as well as the working area. These are washing, sanitizing and drying.
All the tools and utensils must undergo pre-rinsing to remove the food residue. All
the glassware must be washed first before the silverware, chinaware as well as the
utensils and last is the working area. Washed all the kitchen tools, utensils and
working area.
