SALAD DRESSINGS & VINAIGRETTES

Italian Dressing Ginger Dressing


40g gorgonzola cheese, diced 1/3 cup peanut oil
30ml canola oil 2 teaspoons honey
50ml cream 2 teaspoons white vinegar
20ml white wine vinegar 1 teaspoon soy sauce
1 teaspoon sugar 20g fresh ginger.
Pinch salt.
Poppy Seed and Honey Dressing Caesar Salad Dressing
This dressing is perfect for green salads and 30ml white wine vinegar
for those which combine fruit and meats such 115 g plain non-fat yogurt
as pork, duck or chicken. 4 teaspoons grated parmesan cheese
3 tablespoons honey ¼ teaspoon black pepper
3 tablespoons cider or wine vinegar 2 anchovy fillets, chopped
2 teaspoons Dijon mustard 2 cloves garlic, chopped.
1 tablespoon poppy seeds
Salt and pepper Blend all ingredients
1 small onion/shallot.
Green Goddess Salad Dressing Classic French Dressing
double handful of basil leaves 2 tablespoons red wine vinegar
½ tin of anchovies (oil and 4 fillets) ¼ teaspoon salt
clove of garlic ½ teaspoon mustard powder
2 – 3 tablespoons extra virgin olive oil ¼ teaspoon sugar
2 tablespoons yogurt ¼ cup olive oil
1 teaspoon Dijon mustard ¼ cup canola oil
2 tablespoons red/white wine vinegar Makes ¾ cup.
Asian Dressing Mustard Vinaigrette
1/3 cup vegetable oil Great for potato salads and meat salads.
¼ cup soy sauce 2 tablespoons wine vinegar
2 tablespoons fish sauce 1 tablespoon Dijon mustard
3 teaspoons brown sugar ½ teaspoon salt
1 tablespoon fresh ginger A good grinding of black pepper
1 teaspoon sesame oil 6 tablespoons olive oil
½ teaspoon white pepper Beat all ingredients except oil, which is added
2 teaspoons sesame seeds – add after blending a bit at a time. Dressing should thicken.
Makes 1 cup Makes 2/3 cup.
Honey Balsamic Dressing Lemon Vinaigrette
1/3 cup olive oil Use over salad greens or tomatoes, or as a
¼ cup balsamic vinegar dressing for lightly cooked vegetables, or
3 teaspoons honey pasta and rice salads
S&P 2 tablespoons lemon juice
Add 2 tablespoons pine nuts after blending. 1 teaspoon Dijon mustard
Makes ¾ cup. ½ teaspoon salt/pepper
1 clove garlic, smashed.
½ cup olive oil
¼ cup chopped parsley.

Greek Salad Dressing Homemade Mayonnaise
½ cup olive oil 3 egg yolks
2 tablespoons red wine vinegar 2 tablespoons lemon juice
1 teaspoon dried oregano ¾ cup olive oil – add gradually
Juice and rind of 1 lemon 2 teaspoons Dijon mustard
