rabe, or, as Italians call it, cime di rapa
(which means turnip tops). Although
broccoli rabe is in the same family as
regular broccoli, its also related to the
turnip. Broccoli rabes florets are much
smaller than those of its broccoli cousin,
its stems are more slender, and its leaves
more plentiful. Unlike with broccoli,
however, all parts of broccoli rabe
(Brassica rapa ruvo) are eatenits stalks
dont require peeling because theyre
not as thick and tough as broccolis. Its
flavor has a bitter edge that some say turns
mild and creamy when cooked past

Shape dough into 1-inch
balls; roll in a mixture

Fold 2 tablespoons finely
grated lime zest and

FUDGE 101
Want to avoid grainy fudge? Follow these
five tips, and repeat this mantra: The
smaller the sugar crystals, the creamier
the fudge.
Use your hands to butter the inside
walls of the saucepan to help keep sugar
crystals from forming there.
Fudge recipes that call for marshmallows,
marshmallow crme, or corn syrup are fairly
grain-proof, since these ingredients prevent
sugar from crystallizing into large granules.
If possible, use a burner larger than your
saucepan; it helps prevent sugar crystals
from sticking to the sides of the pan.
Cooling the fudge undisturbed
(seriously, no stirring!) to 110F, then
beating it vigorously as directed in the
recipe, produces millions of the smaller
sugar crystals that give your fudge the
desired smooth texture.
Finally, pour the fudge into a baking
pan (lined with buttered foil to avoid
sticking) without scraping the sides of the
saucepan; the scrapings have a firmer,

1 cup butter, softened

2 tsp vanilla
3 cups flour

1 (21 oz.) Lucky Leaf
Cherry Pie Filling
cup chocolate chips
Mix butter and margarine until fluffy. Add flour, powdered sugar
and vanilla just until combined and a soft dough is formed.
Cream butter and sugar until light and fluffy. Mix in eggs, one at
a time. Add vanilla and mix until combined. Add flour, cocoa, salt,
baking soda and baking powder. Mix until combined.
Roll the dough into two-inch balls. Place on greased baking sheet or
baking sheet lined with parchment paper. Press thumb into center of
cookie to make a well. Place cherries into each cookie.

Actually, you dont want that iconic pop. Heres why, and how to
avoid giving yourself or your guests a wine shower or cork tattoo:
To remove the wire cage (after peeling off any foil), I hold the
bottle by the neck and keep my thumb on top of the cage as I
untwist the wire; others drape a towel over it.
Once youve loosened the cage, you can either remove it,
putting your thumb back on top of the cork as soon as the cage is
off, or you can leave it on.
With the bottle at a 45-degree angleand pointing away from
your guests and fine chinagrasp the cork (or the cork and cage)
with one hand, and slooowly turn the bottle with your other hand.
Pressure inside the bottle will begin to push the cork out
(because youre holding the cork, it cant fly outyou are still
holding the cork, arent you?). Youll feel the cork start to move, then
ease it out. A pop is a nice sound, but a soft hiss or sigh means
you did it right. Even if you did everything perfectly, you might get a
small eruption of wine, particularly if you lifted the bottle upright too
quickly, so have glasses on hand to pour right away if necessary.

IT HAS TO BE WHITE
Sparkling red wines are a bit unusual, but theyre perfect on the
holiday table. Color in wine comes from the grapes skins, and skin
also contributes texture and flavor. The richness of a sparkling red,
combined with those palate-cleansing bubbles, makes it a great
match for all kinds of dishes.
I absolutely love Lambrusco, an Italian wine that, despite the
reputation it acquired from the Riunite brand, is not always sweet.
Lambrusco has undergone a renaissance in the last decade, and
some excellent ones have begun to arrive in the U.S. in recent years.
Another red bubbly, sparkling Shiraz, works better with
challenging flavor combinations of holiday meals better than any
other wine I know. It can be a bit harder to find, but worth the hunt.

Myth 4:
I like nice crystal as much as the next guy, and a tall, narrow
flute does seem to keep the bubbles going longer. But the most
memorable glass of Champagne of my life was in a standard
tumbler. I was tending bar at a busy Manhattan restaurant, and my
fellow bartender had, unbeknownst to me, put a bottle of Roederer
Cristal (seriously good stuff) on ice. After about four hours of
pumping out drinks, the pace slowed briefly, and he handed me The
Tumbler. I took a sip and everything stopped. It was like when all the
other actors in a movie freeze but the star is able to move through
the scene. I was the star, the icy liquid was the star, there were stars
in my glass! Id never tasted anything so delicious, so refreshing, so
but there were customers waiting, so my thought bubble was rudely
burst. Ive been lucky enough to taste that wine several times since;
its always great, but never greater than that night. Out of a tumbler.

When the seasoning is
intact, yes! The iron
itself is porous, but
the baked-on oil coating
fills and smoothes the
pores, making it slick
and nonstick.
What if it rusts?
Dont worry. Its not ideal,
but its probably not
ruined. Scour off the rust
with coarse salt and a stiffbristle brush; rinse and dry
thoroughly, and reseason.
Is it clean enough if
I dont use soap?
In a word, yes. It gets
blazing hot in a minute
hot enough to kill anything
that might live on its
surface.
What if I dont want my
skillet cobbler to taste
like onions?
Rub the skillet with
salt between savory
and sweet applications.
Salt will help absorb
moisture and any off
odors. Coarse salt is also an

you want to avoid cooking
wine, tomatoes, and other
acidic stuff in a cast-iron
skillet; they strip away the
oil coating and can react

1 Combine raspberries, sugar,
cornstarch, and water in a
saucepan; bring to a boil, and
cook until sauce thickens, about
5 minutes. Pour through a mesh
strainer to remove seeds.
Make cheesecake:
2 Preheat oven to 325F.
3 Mix together cookie
crumbs, 3 tablespoons sugar,
and butter in a bowl. Press
