How is this possible?

I like watching Restaurant Impossible. What amazes me most is the unbelievable silliness of the restaurant owners. I just saw a repetition of the episode 1 of season 22 about Ash Fork. I am a foreigner and I cannot understand how people can open a restaurant without any knowledge about accounts or calculation of prices? Failure is inevitable like this. Don't people learn anything about marketing or accounts at all at school there? And are there no courses about these subjects? And why do people go on running their business when they are already into deep debts and are loosing money every day? It doesn't make sense at all. How can anybody even think of opening a business without any knowledge?
