Desde el punto de vista de la Ingeniería, todos sabemos que la limpieza, debe concebirse involucrada con el proceso industrial; tanto desde el punto de vista material y de explotación, como aquél de la calidad del productos obtenido y, esto es más evidente, en el sistema CIP-LIS,. No se puede, desacoplar los estudios de investigación, de las concepciones, (diseños), de los procesos de fabrica- ción, de las operaciones unitarias de limpieza y desinfección. Debe existir entonces, una aproximación global de flujos, tales como: energía, agua, materiales, insumos, rechzos, etc., involucrados en la optimización de las operaciones de limpieza y desinfección. La limpieza y desinfección, ha dejado de ser, los parientes pobres de una producción industrial; debe, entonces, responder a los mismos criterios de sanidad (limpieza), y de sobriedad, tendiendo al ideal de la instalación indus-trial: una fábrica seca. Se podría pensar, que con las modernas regulaciones, los sistemas de proceso, refrigeración, educación, etc., que las tendencias tendrían que ir en disminución, en la prevención de contaminaciones, especialmente en productos listos para su ingestión. Pero no es así, por lo contrario, las tendencias han ido en aumento y, los productos alimenticios que antes no estuvieron implicados, se han visto infectados, con por ejemplo, salmonelosis. Estas tendencias ascendentes, se deben a las mejoras en la información y, el contar con nuevos recursos analíticos. Bien, que en el curso de los últimos años, se han obtenido interesantes resultados, que se han acumulado en nuevos conocimientos. Los responsables de los establecimientos alimenticios, incluídas las actividades de bebidas y enológicas, se encuentran enredadas por informaciones contradictorias; para decidir, el momento o las zonas de sus equipamien- tos, que deben ser limpiados y desinfectados, y con qué frecuencia. Primeramente, una pregunta puede imponerse y, es saber, si las operaciones de higiene realizadas frecuentemente, no son más que una inversión lucrativa, para los fabricantes de productos de limpieza y desinfección. La finalidad, que se expone en este tratado, es dar una orientación sobre la elección de los productos de limpieza y desinfección, tanto como sus métodos de aplicación. Limpieza: se entiende por este término, la desaparición de sustancias, tales como, suciedades o residuos alimenta- Rios, de las superficies sobre las cuales se adhieren físicamente, de los equipos y maquinarias de las líneas de producción. Una reducción del consumo de agua y, de la producción de efluentes poluantes, ligados a las operaciones de limpieza y desinfección, es un tema principal a desarrollar. Desde esta óptica, los productos combinados (detergentes – desinfectantes), son los recomendados para su uso. Actualmente de poco uso. Parece conveniente, el generalizar la limpieza y desinfección en seco, por: raspado, cepillado con aspiración, empuje por aire comprimido, etc.; permitiendo economizar agua y, también, productos detergentes, en vista, que pueden ser recuperados parcialmente. Esfuerzos, que quedan por hacer: tanto desde el punto de vista técnico, como medida de su eficacia, o sea, poner a punto procesos y, validar métodos de desinfección, más “secos”; partiendo de métodos químicos sin lavado, físicos con la ayuda de la radiación Ultravioleta (UV), ultrasonidos, impulsos de laser, etc. Se evidencia, mayor atención a la limpieza y desinfección, que no está en contacto con alimentos, demandan una mayor gestión de agua, lo que inclina estudios sobre la necesidad de ciertos procesos de lavado y desinfección, para ahorro de agua. Así, el uso de captores para seleccionar flujos; o, tecnologías separativas, que permitan racionalizar los consumos, reciclar el agua y, los productos de limpieza y desinfección; particularmente: CIP, y a su vez, reducir los rechazos provocados por defectos en la limpieza y desinfección.
