INGREDIENTS
- ��1 pound (450g) boneless short ribs
- ��12 ounces (340g) rigatoni pasta
- ��2 cups beef broth
- ��1/2 cup grated Parmesan cheese
- ��2 shallots, finely chopped
- ��1/2 cup heavy cream
- �1/2 cup tomato chopped
- ��1 cup assorted fresh herbs (e.g., parsley, thyme, rosemary), finely chopped
- ��8 ounces (225g) mushrooms, sliced
- ��Salt and pepper to taste
- ��Olive oil for cooking

DIRECTIONS
- ��Season the short ribs with salt and pepper.
- ��In a large, oven-safe pot or Dutch oven, heat some olive oil over medium-high heat.
- ��Sear the short ribs on all sides until they're browned.
