Chimichurri Meatballs:
Makes 25-30 golf ball sized meatballs

Chimichurri Sauce (Yield:  about ½ cup):
1 small shallot, cut into wedges
3/4 cup flat-leaf parsley, stems removed
1 tablespoon fresh oregano, stems removed
2 garlic cloves, peeled
1 teaspoon Kosher salt
½ teaspoon fresh cracked black pepper
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar, plus more to taste
 
Meatballs:
Olive oil, for greasing

Feel free to substitute ground chicken or beef or lamb. I used parsley and cilantro, and although parsley is essential to traditional chimichurri, you could add any tender herb you like. Makes 12 large meatballs.

Chimichurri:
2 c packed parsley and cilantro leaves (tender stems ok)
3 cloves garlic, smashed (or 1 head roasted garlic)
½ c extra virgin olive oil
½ t salt
3 T red wine vinegar
2 t dried oregano
Pinch red pepper flakes
½ t ground black pepper

Meatballs:
½ c panko or other bread crumbs
1 egg, lightly beaten with a fork
¼ c chimichurri
2 T water
1 lb ground turkey
½ t kosher salt
