Soy Sauce Tuna

Tuna is always my favorite food. But recently I developed a symptom of feeling unwell when I smell half cooked fish. I cannot stand the fishy smell. So I avoided eating fish for a while, unless it is well seasoned and well cooked. I also started to eat rice porridge frequently as it does helps to comfort my stomach. This simple rice porridge does helps to reduce bloating problem and is also easy to make. But it cannot be eaten alone and must be accompanied with other meal made with meat and vegetable.  I have been thinking on what should I cook to partner with my porridge. Fried anchovies, egg in soy sauce, fried chicken came to mind.  At last  I found a slice of boiled tuna in the fridge and quickly decided on this menu which is soy sauce and ginger tuna. Canned sardine is a versatile food which we can use to cook many dishes. There are several types of canned sardines, such as sardine in oil and sardine or tuna in tomato sauce. The way it is processed made sardines bones to be soft and edible. This makes the canned sardine more convenient to be consumed and also simplified the fish sandwich making process.  Today I cooked a simple dish out of a canned sardine. This is initially my father's recipe and we eat this with rice. I call it Canned Sardine Soup. It is a thin soup made with some spices and canned sardine with its tomato sauce. Even though it is thin in consistency this soup is flavorful. It is suitable to be made for lunch, dinner and during weekend. Kerabu is a type of salad in Malaysia. I think in Thailand there  are also similar dish like this. It is a form of vegetable, fruit and or meat salad which are finely chopped and mixed with other ingredients and flavorings such as grated coconut, coconut milk, nuts and many others.  Kerabu is really tasty when eaten with rice.  It is good eaten along with curry, and gulai. One of the kerabu recipe is Sambal Pauh which I will translate as Spicy Fish and Mango salad. Even though it is called sambal it look and taste more like salad.  Sambal Pauh is a dish which contains a combination of spicy, salty, fishy, a hint of sweet and sour taste. These combination of taste maybe enough to satisfy our taste buds. Solok Lada (so-lock la-da) or Stuffed Chili is a side dish along with Nasi Kerabu (Kelantanese Salad Rice). It is also can be eaten along with rice and gulai or curry. It is a dish made from big green chili (usually a type of chili we call solok chili) filled with flavored grated coconut and fish.  The taste of solok is creamy, a bit spicy, salty and sweet. However the spiciness of the chili has been largely reduced because the chili is cooked and the seeds are removed before stuffing in the coconut filling. Usually sardine and mackerel fish are used to make Solok Lada.  Solok Lada is delicious when eaten with Nasi Kerabu which has a mixed flavor from fresh minced vegetables and herbs, spicy coconut sauce (tumis), grated coconut sambal and budu (anchovies sauce). Malay/English We usually eat fish curry 5 to 7 times a month. Yesterday my mom and Ichah (my 7 years old niece) and my brother went to night market and bought a spanish mackerel fish head. Ichah was the one asking her grandmother to buy the mackerel as she wants my mom to cook her favourite fish soup. So my mom bought 1 slice of mackerel for Ichah and mackerel fish head for us. So when her aunt found the mackerel fish head this morning she went and cook fish head curry. This is a recipe which I always use to cook thin fish curry (fish curry that used little coconut milk). This fish curry recipe is the one I obtained from trial and errors and combination of recipes which I got from here , here and here . Those recipes are all good and delicious, but I made some changes and combinations to suit my family's taste and also based on the ingredients I already have at home. Fish in tamarind sauce is a dish I always cook when we bought big sized fish. There are many versions of it. This recipe is the one that I have learned from various recipes and made some adjustments to suit my family taste.  The strength of the dish is the taste of herbs and balanced combination of sweet, salty and sour taste. Combined with deep fried fish with crispy edges, it produces a delicious taste. I like to garnish it with cilantro stem and leaves as it added fresh herb taste to the dish.  We eat this fish in tamarind sauce with rice. Usually when I cook this, I don't cook other additional dish. The type of fish used to cook this fish in tamarind sauce depends, usually sea bass and grouper are used. Grilled Fish with Coconut Sauce (Ikan Percik)

Ikan percik or grilled fish with coconut sauce, is a very delicious dish which is always eaten with rice. The sauce has a creamy texture with the taste of lemongrass and black pepper. This percik can be made using various types of fish like Indian mackerel and catfish. I think that soft and fatty fish will results in a better percik.  Ready in 45 minutes Ingredients 200 gram fish of choice 1 inch ginger for marinating 2 cloves garlic for marinating 1 teaspoon salt for marinating 1 inch ginger 3 cloves garlic 5 shallots 5 stalks lemongrass 1 tablespoon black pepper 250 ml coconut milk 2 tablespoon sugar 1 teaspoon salt Methods Marinate fish with marinade ingredients for at least 30 minutes Meanwhile prepare the sauce. I like to fry or saute canned sardine or make canned sardine sambal. It has a combination of spicy flavor from chili, ginger and garlic flavor, sweet and also sour from onions and tamarind. I like to eat only this dish with rice and some fresh vegetables or acar because it gives a clearer taste of the dish. Enough sourness is the key to the tastiness of this dish. Here Tuna is called 'Tongkol' fish. But in some area, it is called 'Aya'. 'Aya' fish. Tuna is beneficial for our health. Some articles claim that it does help our brain to function better.
