Abstract

본 명세서에는 마늘 에센스로 부터 제조되는 식품 보존제가 기재되어 있다.
이 식품 보존제는 마늘의 독특한 냄새가 없으며, 식품에 첨가되거나 식품위에 분무될때 뛰어난 항균작용을 나타낸다.
본 명세서에는 또한 마늘을 에탄올이 첨가된 수용액에 침지하고 그 마늘 에센스에 피트산을 마늘의 0.4~0.6중량%의 양으로 첨가함으로써 식품 보존재를 제조하는 방법도 기재되어 있다. 피트산은 마늘의 독특한 냄새를 제거한다.마늘 에센스는 단독으로 또는 1~100㎍/㎖의 양으로

Claims (4)

  1. 물, 1~100㎍/㎖의 양의-폴리리신, 및 에탄올에 의해 추출된 식품성 알칼로이드로 이루어지는 것을 특징으로 하는 식품 보존제.
  2. 제1항에 있어서, 식품성 알칼로이드가 알리신인 것을 특징으로 하는 식품 보존제.
  3. 마늘 구근을 에탄올 및 피트산이 첨가된 수용액에 침지하여 그 마늘 구근으로 부터 알리신을 추출하고, 그 용액을 정제하고, 그안에-폴리리신을 1~100㎍/㎖의 양으로 첨가하는 것으로 되어 있는 것을 특징으로 하는 식품 보존제의 제조방법.
  4. 마늘 구근을 에탄올이 첨가된 수용액에 침지하여 마늘 에센스를 추출하고, 그 용액에 피트산을 첨가하여 마늘의 독특한 냄새를 제거하고, 그 용액을 pH 5.5~7.5로 조절하는 것으로 되어 있는 것을 특징으로 하는 식품 보존제의 제조방법.
