도 2는 본 발명의 멜론 발효차 제조 방법에 사용되는 멜론의 구조 및 명칭을 나타내는 그림이다.

Claims (6)
2) 네트가 제거된 멜론을 껍질, 과육 및 씨앗으로 분리하는 단계;
3) 네트가 제거된 멜론 껍질과 과육을 각각 착즙하여 착즙액과 건지를 분리하는 단계;
4) 상기 네트가 제거된 멜론 껍질 착즙액에 뽕잎가루를 첨가하고 1 ~ 20℃에서 1 ~ 20일간 숙성시키는 단계;
5) 상기 과육 착즙액에 비정제설탕 10 ~ 50 중량%를 첨가하여 1 ~ 30℃에서 1 ~ 30일간 숙성발효시키는 단계;
6) 상기 3) 단계에서 분리된 껍질 건지와 과육 건지 혼합물에 쌀누룩 발효액을 첨가하고 1 ~ 20℃에서 1 ~ 20일간 호기발효시키는 단계;
7) 상기 6) 단계의 건지 혼합 발효액과 상기 5) 단계에서 숙성발효된 과육 착즙액을 혼합하고 70 ~ 90℃ 온도에서 4 ~ 8시간동안 농축시키는 단계;
8) 상기 7) 단계의 혼합 농축액에 상기 4) 단계의 껍질 착즙액을 첨가하는 단계;및
9) 수분을 제거하여 분말화하는 단계를 포함하는 멜론 발효차 제조방법.
상기 4) 단계에서 뽕잎가루를 네트가 제거된 멜론 껍질 착즙액 대비 0.1 ~ 5 중량% 혼합하는 멜론 발효차 제조방법.
상기 6) 단계에서 분리된 껍질 건지와 과육 건지 혼합물 대비 쌀누룩 발효액을 2 ~ 15 중량% 첨가하는 멜론 발효차 제조방법.
상기 7) 단계에서 건지 혼합 발효액과 숙성발효된 과육 착즙액을 20 ~ 40 중량% 및 60 ~ 80 중량% 혼합하는 멜론 발효차 제조방법.
상기 8) 단계에서 혼합 농축액 대비 껍질 착즙액을 5 ~ 30 중량% 첨가하는 멜론 발효차 제조방법.
상기 6) 단계의 쌀누룩 발효액은
a) 멥쌀로 고두밥을 찌는 단계;
b) 쪄진 고두밥과 쌀누룩(이화곡)을 1:1~3의 중량비로 혼합하고 치대어 호화시키는 단계;
c) 상기 호화시킨 고두밥 쌀누룩 혼합물 및 정제수를 1:1로 혼합하여 40 ~ 60℃의 온도에서 3 ~ 24시간 발효시키는 단계;및
d) 상기 발효액이 20 ~ 40 브릭스가 되면, 상기 발효액을 1 ~ 20℃에서 12 ~ 72시간 숙성시키는 단계로 제조되는 멜론 발효차 제조방법.
