Claims (14)
- 흑염소 육수에 흑염소 살코기, 수삼, 대추 및 검은 능이버섯을 투입하는 1단계;
재료가 투입된 육수를 가열 및 끓여서 탕을 제조하는 2단계; 및
상기 탕에 고명을 올려서 흑색탕을 제조하는 3단계;를 포함하는 것을 특징으로 하는 흑염소 흑색탕의 제조방법.
- 제1항에 있어서, 상기 1단계는 상기 흑염소 육수 500mL 당 흑염소 고기 100 ~ 300g, 수삼 10 ~ 30g, 대추 10g ~ 25g 및 능이버섯 10 ~ 35 g를 투입하는 것을 특징으로 하는 흑염소 흑색탕의 제조방법.
- 제1항에 있에서, 2단계는 육수가 끓을 때 발생하는 거품을 제거하면서 육수를 끓이는 것을 특징으로 하는 흑염소 흑색탕의 제조방법.
- 제1항에 있어서, 상기 고명은 팽이버섯 1 ~ 5g, 부추 10 ~ 30g 및 흑임자 가루 2.5 ~ 3.0g를 포함하는 것을 특징으로 하는 흑염소 흑색탕의 제조방법.
- 제1항에 있어서, 3단계 또는 3단계 이후에 흑색탕에 간장 양념소스를 더 투입하며,
상기 간장 양념소스는 약재 달인 물, 올리고당 및 양조진간장의 혼합물을 2분 ~ 5분간 가열하여 졸인 혼합물을 제조한 후, 졸인 혼합물을 식힌 다음, 매실초 250 ~ 450 ml 및 소주 20 ~ 80 ml를 혼합하여 제조한 것을 특징으로 하는 흑염소 흑색탕의 제조방법.
- 제5항에 있어서, 상기 약재 달인 물은
물 1500 ml에 대하여, 표고버섯 1.5 ~ 5 g, 건 다시마 1 ~ 4g, 감초 1.5 ~ 3g, 갈근 3 ~ 7g, 대추 3 ~ 8g, 청양고추 2 ~ 10g, 통후추 1 ~ 5g, 생강 200 ~ 380g, 양파 200 ~ 450g 및 대파뿌리 50 ~ 150g을 혼합한 혼합물을 가열하되, 혼합물 내 건더기를 제외한 액체가 850 ~ 950 ml가 될 때까지 가열한 후, 건더기를 걸러서 제조한 것을 특징으로 하는 흑염소 흑색탕의 제조방법.
- 제5항에 있어서, 상기 혼합물은 약재 달인 물 100 ml 당 올리고당 4.5 ~ 6.5 ml 및 양조진간장 70 ~ 90 ml를 포함하는 것을 특징으로 하는 흑염소 흑색탕의 제조방법.
- 제1항에 있어서, 상기 흑염소 육수는
흑염소 삶은 고기를 준비하는 단계(S11);
가마솥에 상기 흑염소 삶은 고기를 넣은 후 물 130L ~ 160L를 부은 후, 가열 및 끓이는 단계(S12):
끓는 물에 삼지구엽초, 오가피나무, 오가피열매, 헛개나무, 헛개열매, 엄나무, 황기, 홍삼, 생강, 검은콩, 흑임자 및 흑미쌀을 포함하는 포대자루와 상기 흑염소 삶은 고기를 넣은 후, 매실초 및 소주를 투입하고 솥두껑을 닫은 후, 끓이는 단계(S13):
끓는 육수에 떠오르는 거품 및 불순물 제거한 다음, 솥두껑을 닫은 후, 1시간 10분 ~ 1시간 50분 동안 끓인 후, 이어서 불 세기를 낮춰서 5분 ~ 20 분 동안 끓인 후, 육수 내 거품과 이물질을 제거하는 단계(S14):
불 세기를 다시 높여서 끓이는 단계(S15):
흑염소 삶은 고기를 건져서 뼈, 살코기 및 껍질을 분리한 후, 뼈를 가마솥의 육수에 재투입한 후, 20분 ~ 40분 동안 끓인 다음, 불 세기를 줄여서 5분 ~ 15분 정도 끓이고, 육수 내 거품 및 불순물을 제거한 후, 불 세기를 다시 높여서 20분 ~ 40분 동안 끓이는 단계(S16);
불을 끈 후, 20분 ~ 40분 동안 서서히 식히면서 뜸들이는 단계(S17);
육수로부터 흑염소 삶은 고기와 뼈를 분리하는 단계(S18);를 포함하며,
상기 흑염소 삶은 고기는 살코기와 껍질이 뼈로부터 분리되지 않은 것을 특징으로 하는 흑염소 흑색탕의 제조방법.
- 제1항에 있어서, 상기 흑염소 삶은 고기는
흑염소 생고기를 절단하여 절단된 생고기를 준비하는 단계;
절단된 생고기로부터 핏물을 제거하는 단계;
핏물이 제거된 생고기를 끊는 물에 넣은 후, 소주 및 매실초를 넣는 단계;
거품 및 불순물을 제거한 후, 8분 ~ 15분간 더 끊인 후, 익힌 생고기를 꺼내어 5 ~ 25℃의 찬물에 담그어 두는 단계;를 수행하여 제조한 것을 특징으로 하는 흑염소 흑색탕의 제조방법.
- 제1항 내지 제9항 중에서 선택된 어느 한 항의 방법으로 제조한 흑염소 흑색탕 취식시, 흑색탕의 건더기를 간장 양념소스와 함께 취식하는 것을 특징으로 하는 흑염소 흑색탕 취식방법.
- 제10항에 있어서, 상기 간장 양념소스는 약재 달인 물, 올리고당 및 양조진간장의 혼합물을 2분 ~ 5분간 가열하여 졸인 혼합물을 제조한 후, 졸인 혼합물로부터 건더기를 제거한 액체 850 ~ 950 ml에 대하여, 매실초 250 ~ 450 ml 및 소주 20 ~ 80 ml를 포함하는 것을 특징으로 하는 흑염소 흑색탕 취식방법.
- 제1항 내지 제9항 중에서 선택된 어느 한 항의 방법으로 방법으로 제조한 것을 특징으로 하는 흑염소 흑색탕.

- 제13항에 있어서, 상기 흑염소 육수는 흑염소 삶은 고기, 삼지구엽초, 오가피나무, 오가피열매, 헛개나무, 헛개열매, 엄나무, 황기, 홍삼, 생강, 검은콩, 흑임자 및 흑미쌀을 포함하는 혼합물을 달여서 제조한 것을 특징으로 하는 흑염소 흑색탕.
