Abstract
본 발명의 커피 농축 조성물은, 다음의 성분 (A) 및 (B) ;
(A) 클로로겐산류 : 건조 고형분 중에 100 ∼ 300 ㎎/g, 및
(B) 5-하이드록시메틸푸르푸랄 : 건조 고형분 중에 0.33 ㎎/g 이하를 함유하고, 건조 고형분이 10 ∼ 100 질량% 이다.

Claims (15)
- 다음의 성분 (A) 및 (B) ;
(A) 클로로겐산류 : 건조 고형분 중에 100 ∼ 300 ㎎/g, 및
(B) 5-하이드록시메틸푸르푸랄 : 건조 고형분 중에 0.33 ㎎/g 이하를 함유하고, 건조 고형분이 10 ∼ 100 질량% 이고, 배전 커피콩으로부터 추출 용매에 의해 추출된 커피 추출액을 농축 또는 건조시켜 이루어지는 커피 농축 조성물. - 제 1 항에 있어서,
당해 커피 농축 조성물의 건조 고형분 중의 (A3) 디카페오일퀸산류와 (A) 클로로겐산류의 함유 질량비[(A3)/(A)]가 0.05 ∼ 0.16 인 커피 농축 조성물. - 제 1 항 또는 제 2 항에 있어서,
(A) 클로로겐산류의 함유량이 당해 커피 농축 조성물의 건조 고형분 중에 105 ∼ 200 ㎎/g 인 커피 농축 조성물. - 제 1 항 또는 제 2 항에 있어서,
5-하이드록시메틸푸르푸랄의 함유량이 당해 커피 농축 조성물의 건조 고형분 중에 0.005 ∼ 0.27 ㎎/g 인 커피 농축 조성물. - 제 1 항 또는 제 2 항에 있어서,
당해 커피 농축 조성물을 가스 크로마토그래프 질량 분석법 (GC/MS 법) 으로 분석했을 때의 (C) 2-메틸피라진과 (D) 3-메틸부타날의 피크 면적비[(D)/(C)]가 0.1 이하인 커피 농축 조성물. - 제 1 항 또는 제 2 항에 있어서,
당해 커피 농축 조성물을 가스 크로마토그래프 질량 분석법 (GC/MS 법) 으로 분석했을 때의 (C) 2-메틸피라진과 (D) 3-메틸부타날의 피크 면적비[(D)/(C)]가 0.0010 ∼ 0.070 인 커피 농축 조성물. - 하기의 2 종의 배전 커피콩;
(a) L 값 14 ∼ 20 의 제 1 배전 커피콩 40 ~ 65 질량%, 및
(b) L 값 25 ∼ 40 의 제 2 배전 커피콩 60 ~ 35 질량% 의 혼합물로서, L 값의 평균값이 21 ∼ 28.5 가 되는 배전 커피콩의 혼합물을, 65 ~ 95 ℃ 의 추출 용매에서 다단계 추출하여 농축시키는 커피 농축 조성물의 제조 방법. - 제 7 항에 있어서,
상기 다단계 추출에 있어서의 추출 배율이 0.5 ∼ 2 인 커피 농축 조성물의 제조 방법. - 제 7 항 또는 제 8 항에 있어서,
상기 다단계 추출에 있어서의 추출 용매가 물 또는 알코올 수용액인 커피 농축 조성물의 제조 방법. - 제 7 항 또는 제 8 항에 있어서,
상기 다단계 추출에 있어서의 추출 압력이 0.1 ∼ 1.5 ㎫ 인 커피 농축 조성물의 제조 방법. - 제 7 항 또는 제 8 항에 있어서,
상기 커피 농축 조성물이, 다음의 성분 (A) 및 (B) ;
(A) 클로로겐산류 : 건조 고형분 중에 100 ∼ 300 ㎎/g, 및
(B) 5-하이드록시메틸푸르푸랄 : 건조 고형분 중에 0.33 ㎎/g 이하를 함유하고, 건조 고형분이 커피 농축 조성물의 10 ∼ 100 질량% 인, 커피 농축 조성물의 제조 방법. - 삭제
